A sweet and spicy dip made with chipotle gouda, sweet corn, roasted hatch chiles and greek yogurt! Simple to throw together, yet full of flavor!
Let’t talk family traditions for a minute.
Does your family have a special tradition for birthdays or Friday nights? Do you always have popcorn and movie night on Sunday’s? Or is every Saturday pizza and finished off with an ice cream bar?
If it’s the later, I am joining tomorrow. I adore ice cream in every fashion!
Ever since the hubs and I started dating, we have special date nights that include a wide array of tapas. Which ends up with our eyes being bigger than our stomachs.
But that doesn’t stop us from trying to indulge.
Whether we are heading out onto the town to our favorite local tapas restaurant, or it is a special Friday night in, tapas dinners are our speciality. Tonight happens to be one of those special nights as we are celebrating my birthday (early). Needless to say, I am already giddy about our date night this evening!
I have made our favorite tapas for you all about a year ago, right when I started blogging. The fig, goat cheese and sun dried tomato bruschetta is irresistible. Sweet jam from the figs, the creaminess from the goat cheese and the tangy sun dried tomatoes make for one killer bite that keeps you coming back for more. My hubby requests these on repeat almost every other weekend. If I would let him, this would be a complete meal for him! Only three ingredients, and it quite possibly in the running for my favorite tapas to date. Spicy chorizo + sweet dates + buttery prosciutto = perfection. I am telling you, you gotta try em!
Beyond bruschetta and chorizo stuffed dates, Mr HIT and I can polish off any dip in one sitting and not feel guilty one bit. Especially one such as today’s. I mean, it practically has every food group.
Let’s see, we have plenty of vegetables and a bit of {healthy} carbs; crisp sweet corn and roasted hatch chiles. Then we have protein boosting greek yogurt. And Boar’s Head Bold Chipotle Gouda Cheese for the dairy. This cheese is a fusion of smoky chipotle spice and zesty peppers in buttery gouda. I love gouda for how versatile it is – from adding into dips such as this, it is also ideal for snacking on from a cheese tray at your next party, say during the upcoming holidays!

Ingredients
- 4 oz low fat cream cheese
- 1 cup non fat, plain free yogurt
- 1/2 lb Boar’s Head Bold Chipotle Gouda Cheese, cut into small pieces
- 2 cans (14.5) sweet corn
- 2 hatch chiles
- 2 tsp garlic powder
- 2 tsp salt
- 1 tsp black pepper
Instructions
- Turn broiler on high.
- Add hatch chile. Let blister on one side, then give it a quarter turn. Blister again, then turn until all sides are blistered. Remove from oven and allow to cool until you can handle it. Peel black charred skin away from pepper. Remove stem and seeds then chop.
- Preheat oven to 375 degrees F.
- In a medium bowl, combine cream cheese, yogurt and cheese. Mix well.
- Add remaining ingredients.
- Put mixture into 10 inch cast iron skillet, or 9x9 baking dish. Place in oven and bake for 30 minutes, or until mixture is heated through and bubbly.
- Remove from oven and allow to cool for 5 minutes, then serve.
