It’s almost half way through July.
Freaking July!
It feels like we were just celebrating New Years but in reality, we are closer to 2016 than we are to the start of 2015.
Which brings me to…that means I am only 3 months away from having baby. Being in control of another being’s life.
Halp.
This weekend, the hubs and I picked out the essentials for the little babe. And it contained more than this cute Elephant Bath Towel. Dying. More importantly, the car seat, stroller, pack and play, yada, yada, yada. Holy decisions. The first time we went in to start our registry, it was safe to say that we were both completely freaking out on the inside.
So.Many.Decisions.
But after a few breathers and cocktails for the Mr., we calmed down, talked to some family and friends and were able to venture back to the store and make some educated decisions. Each day thats passes, it gets a little more real.
As if the gabs and kicks to my ribs, weren’t enough evidence. But secretly, I live for those little gabs. I am just going to believe that it’s their only way of saying “Hey Mom!”
Besides more gushing about baby love, I am totally swooning over caprese this summer. We all know my diet could be 90% mozzarella + tomato + basil + balsamic, so when my fruit obsession was getting out of control, I knew I had to change up my caprese game. And the result? Game changer.
Juicy peaches are SO good right now. Have you got your paws on them yet? If not, run, not walk, to the store to get them. With their slight sweetness, it balances out the savory, saltiness of the fresh mozzarella. You can’t really go wrong with mozzarella, can you? I mean, it melts awesome. It’s perfect for snacking and is the star in caprese salads. So make sure to get fresh. You won’t regret it.
I am sorta embarrassed with how easy this recipe is. I mean. A few fresh ingredients. A few slices and dices, smack it all on a plate and you have yourself one freakin good salad. It’s on the of the only salads that is on repeat during the summer months in our house. It’s not unusual for you to take a peak in to my fridge and see a big bowl of cherry tomatoes, fresh mozzarella and basil.
Next summer when I get a chance to plant my own garden, you betcha my basil game will be out of control. Watch.Out.

Yields 4
Ingredients
- 1 pound ripe peaches, cut into eighths
- 4 ounces fresh mozzarella, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Handful fresh basil, chiffonade
- Balsamic Glaze
Instructions
- Combine the peaches and the mozzarella on a platter.
- Sprinkle with salt and pepper.
- Top with basil then drizzle with balsamic drizzle.
- Serve immediately.
