Sorta freaking out.
Like as in this is the biggest week of my life (thus far for the past 28 years I have walked this earth.) On Saturday, I get to go to the chapel, wear a white, gorgeous dress and become a Mrs!
I am still in denial that the week is finally upon us. It seems that I have been planning for eternity for a day that is only in my dreams.
What girl didn’t start planning her dream day when she was 5 years old, would dress up in pearls, her mother’s heels and in an over sized white gown only to pretend saying ‘I Do?”
As you can imagine, I am overly excited. And would be lying if I said I wasn’t slightly nervous. But one thing I am not nervous about is marrying my best friend and being the lucky gal that gets to call him mine!
So what does this all have to do with sweets and strawberries? Well not much besides the fact that we all know I love to entertain and the week of my wedding is no exception. I have a hard time handing over the reins for all things food. You mean my Type A personality can’t handle not having control?
Quick, no bake desserts are my savor during weeks such as these. Flakey and buttery phyllo cups are filled with a simple and velvety custard of vanilla greek yogurt, frozen whipped topping and Coffee-mate French Vanilla Creamer – the secret ingredient that bumps up the vanilla a few notches.
If you think of boring when you think of vanilla, then you are using it wrong. Vanilla is boring no longer. Vanilla is familiar and calming but it’s also exciting and upbeat. Now you can have the best of both worlds. It has been my flavor of choice for ice cream, coffee and desserts for as long as I can remember. It is far from plain – as most people describe vanilla. The buttery, warm and floral notes make me swoon. Much like the flavor that is in Coffee-mates French Vanilla creamer.

Desserts with only five ingredients, require only a mixing bowl to whip up the greek yogurt mixture and a few strawberries to make them beam, are far from plain and only sure to please any crowd. Even during the busiest of weeks.
So when someone asks for “plain”, politely tell them vanilla is far from plain and take vanilla back!

Yields 15
Ingredients
- 15 miniature phyllo cups, thawed
- 1/2 cup vanilla greek yogurt
- 1/2 cup frozen whipped topping, thawed
- 1 Tbsp Coffee Mate French Vanilla Creamer
- 1 cup strawberries, diced
Instructions
- In a small bowl, mix greek yogurt and coffee creamer. Gently fold in whipped topping.
- Pipe or spoon a small amount of custard into the phyllo cups. Top with diced strawberries.
- Serve immediately or place in fridge until ready to serve.
Notes
*They desserts are the perfect make ahead, but I would not make them more than a couple of hours to ensure phyllo cups stay crispy!*
