I have found my dessert that trumps ice cream.
That is huge.
I would eat this morning, noon and night. And why wouldn’t I? There’s a cookie. There’s caramel. And there’s ice cream. I’m in sugar heaven.
Have you ever had a ‘pizcookie’?! It’s a pizza and cookie all in one.
I have seen them all over pinterest but I just thought “oh come on…how is that different than a cookie cake?!”
OH man was I wrong.
Its soft, gooey and oh so irresistible. I mean its served in a ginormous cast iron skillet! If that doesn’t say I am here to party, then I doesn’t know what does.
The cookie is my flourless peanut butter cookie recipe, but made with chocolate peanut butter rather than regular. You could get crazy here and make it with almond butter, maple peanut butter or even sunflower butter if you have a peanut allergy. With minimal ingredients, it is kinda hard to screw up. I mean, I even can do it. Which says a lot since baking seems to give me anxiety…Oya.
I didn’t stop there with the cookie though. I dropped coin size drops of homemade caramel sauce all over to ensure every bite was filled with caramel goodness.
This is what dreams are made of.
After a quick trip into the oven, the cookie is ready to be devoured!
But just wait right there. Now a skillet cookie is more of a crowd pleaser-stick your spoon right in-gotta be devoured now-sorta desserts. Granted a caramel and peanut butter cookie would be perfectly acceptable and insanely delicious on its own, but for a fancy schmancy dessert, it calls for ice cream.
No dessert is complete without ice cream in my world.
Luckily, I presented my new favorite (for this week…) ice cream last week to you all.
Coffee + Caramel = a winner.
As the ice cream melts, it softens the cookie, making one gooey, caramel mess of a dessert that will make it hard to share!
Now please excuse me while I go face plant into some deliciousness.

Yields 8
Ingredients
- 1 cup chocolate peanut butter (or regular peanut butter)
- 3/4 cup sugar
- 1 egg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup homemade caramel sauce
- 1 1/2 cups Caramel Macchiato Ice Cream
- Extra Caramel Sauce for drizzling
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients except caramel and ice cream.
- Add cookie dough to 8 or 9 inch skillet. No need to grease as there is plenty of oil in the peanut butter!
- Flatten with spatula or hand until dough fills skillet and is evenly spread out. Drop small coin size circles of caramel sauce onto dough.
- Add to oven and bake for 25 minutes. Remove from oven. Let cool 5 to 10 minutes. Then top with ice cream, caramel sauce and dig in!
