  • Butter
  • Coconut Sugar
  • Quick Rising Yeast
  • Salt
  • Al Purpose Flour
  • Water
  • Baking Soda
  • Egg

This Homemade Pretzel Bread Recipe is fool proof ! It has a salty and crispy crust and is tender on the inside, making it the perfect bread for sandwiches or for dunking into your favorite cheese sauce!

how to make pretzel bread

  1. Heat: In a saucepan or microwave-safe bowl, heat the milk and butter until warm, between 120° to 130°F; the butter will not be melted completely.
  2. Mix: In the bowl of a mixer or a large mixing bowl, add the milk mixture, undissolved yeast, and sugar to the milk mixture and stir.
  3. Stir in salt and 2 cups flour, beat for 3 minutes. Slowly add enough remaining flour to make a soft dough.
  4. Knead: Transfer dough to a floured surface and knead until smooth and elastic, 8 to 10 minutes.
  5. Rise: Place in a greased bowl, cover with a towel and let rise for 1 to 2 hours, or until doubled in size.
  6. Preheat oven to 400°F.
  7. Boil: In a large saucepan, combine the water and baking soda. Bring to a boil.
  8. Form: Punch the dough down and divide it into 2 equal pieces. Form each piece into a tight, smooth ball. Add the dough to the boiling water and boil for 2 minutes, turning over after 1 minute. Remove from water and place on a greased sheet pan. Repeat with remaining dough.
  9. Cook: Brush with egg and cut a shallow cross in the top with a knife. Place in preheated oven and bake for 15 minutes. Reduce the temperature to 350?F and bake for 10 to 12 minutes or until the loaves are evenly browned. (After a few trials, we prefer the 10 minutes to the 11 or 12 minutes.) Remove from pan and cool on a wire rack.

Ingredients

  • Dough:
  • 1 cup unsweetened almond or cashew milk (or milk of choice)
  • 2 tablespoons butter
  • 2 tablespoons coconut sugar or brown sugar
  • 1 envelope quick rising yeast

    YUM. I adore pretzels. I live in NYC, so street pretzels are kind of a thing, here. I saw one yesterday that was covered in chocolate, and this roll makes me want to smear some Justin's Chocolate Hazelnut Butter on it. YUM!

    This is my idea of heaven, too! I've had lots of pretzel rolls but never a nice loaf like that. I live in Germany and we don't even have that here. They need to shape up and start making pretzel bread loaves. ;)

    I'm pretty obsessed with homemade bread and this looks and sounds so good! I'm from Germany, moved to the U.S. ten years ago and I sure miss all the breads there, including the bakery fresh pretzel goods. I don't know why I haven't made my own pretzels and pretzel rolls yet, but I need to!

      Hi Sharon, I am sorry to hear that. It is hard to say why it didn't rise since I wasn't there making it with or you didn't mention any possible reasons why. But my first question would be if you used the correct yeast. Or ensure your water was hot enough or not hot enough because that can kill the yeast and prevent it from rising.

    I made pretzel bread with this recipe and it was soooo good! It wasn't perfectly round like the picture when it came out, but it was good! It flew off the plate at my party! Making a double batch today!

    Can the recipe be doubled in the same bowl? I have a banana nut bread recipe that doesn't turn out right when it is doubled so I want to make sure before I try the same thing here.

      Hi Chelsea, I have never doubled the recipe as it makes 4 large rolls/loaves. I would hate to say it works then it doesn't. I would just try it out with a large bowl so it doesn't overflow. Hope it works out for you!

    Hello! I just made this bread and it's so delicious!!! Pretty much followed it to a T (except I did everything by hand because I don't have a stand mixer :)) one question - after the first 15 minutes, I changed the oven temp and opened it to check on the bread, and it was like already a dark brown! It looked perfect, so I took it out, not wanting it to get any darker. Cutting into it, it's still pretty soft almost doughy in the middle. Is it meant to be this way? I'm concerned that I should have done the second 10-12 min even though it was already pretty dark.

    Hi! I totaly enjoyed making these loafes. They are delicious and incredibly easy to make !!! I was wondering cooming time for smaller bread? If I would make 4 out of each loaf... I would put them only a minute in boiling water and about 5-7 min in the oven?

      Hi Elenore! So glad you enjoyed them! As for the smaller loaves...when I made them into pretzel bites (bite size pieces), I boiled them for 20 seconds, then baked them for 11-13 minutes. I think the 5-7 minutes is too short to cook the interior. If you do make mini loaves, I would keep an eye on them in the oven. I am sorry I can't give you a concrete answer as I have never made them into mini loaves! Hope that helps!

    Have been making this recipe for awhile now, it’s amazing. For the first time I decided to make it into buns. One recipe makes 8 rolls. Did a 30 second water bath on each side. Baking time was roughly 18 minutes at 400 for me. Just wanted to share incase anyone might want to try it as sandwich rolls.
