As every day that passes, he constantly is changing and showing me what it means to be truly selfless. It is no longer about just my husband and I. It is about caring for him. And giving him the nurturing he needs. But I wouldn’t change it for the world.
As he grows, so does my appetite! Especially around 4 am when we are partying with milk. To fuel those early morning parties, I turn to quick, portable snacks. Such as these pumpkin pie energy bites that taste like cookie dough. And the past few days, it’s been this dark chocolate chunk loaded banana bread. Chocolate is the perfect morning fuel if you were to ask me…
I started with my mother in law’s banana bread as the base, but I lightened it up to make it a bit healthier; because healthier means more right? Right. I did the same healthy makeover to this apple butterscotch bread last year and it turned out to be a great idea. So this year, I added huge dark chocolate chunks, swapped half of the white flour with whole wheat flour, cut the sugar in half because the bananas provide plenty of sweetness, just make sure to use extra ripe bananas as they provide more sweetness. And lastly, I swapped out the oil and used vanilla greek yogurt for moisture and an extra flavor boost.
But I couldn’t just stop at chocolate banana bread. I was craving a bit more of texture. Sorta as in the crumb topping that we all love on coffee cake. This oatmeal streusel has some major crunch factor. Some major sweetness. And some major addictive qualities. You will be ensuring that every bite as that oatmeal crunch with it!

Ingredients
- 2 tablespoons coconut oil, melted
- 1/4 cup coconut sugar or regular brown sugar
- 1/2 cup old fashioned oats
- 1/2 teaspoon cinnamon
- 1 cup all-purpose flour
- 1 cup white whole wheat flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 large eggs
- 1/2 cup coconut sugar
- 11/2 tablespoon almond milk
- 2 medium extra ripe bananas, mashed
- 1/2 cup plain or vanilla, non-fat greek yogurt
- 1 tablespoon vanilla extract
- 1 cup dark chocolate or semi sweet chocolate chunks
Instructions
- Preheat oven to 350 degrees F. Lightly
grease a 9x5 loaf pan with a nonstick spray. Set aside. - In a small ramekin, combine the melted butter, brown sugar, oats, and cinnamon. Set aside.
- In a medium bowl, add flour, baking powder, baking soda,
salt and cinnamon. Stir well. - In a mixer bowl, add eggs and sugar. Mix and cream for a minute. Add milk, mashed bananas, greek
yogurt and vanilla extract. Mix until completely incorporated, another minute or two. - Add flour mixture slowly and mix for a few more minutes until there no more flour lumps.
- Fold in dark chocolate chunks.
- Add batter to prepared baking pan. Spread out evenly. Sprinkle the entire top with the streusel.
- Place in oven and bake for 45 minutes - 1 hour, or until a toothpick comes out clean when stuck in the middle.
- Allow to cool before slicing.
