With a picture perfect fall weekend ahead that includes all but limited to, a morning walk outside, a bit of shopping, delicious food, my last baby shower, laughter with friends and one of the best fall events in KC…The Plaza Art Fair! It is a one of KC’s honored fall traditions. The weather is always on point and everyone starts to bust out their prized fall outfits. While there is a good handful of people that go for the art, it is one of the top five art fairs in the nation, majority of people (myself included) attend just to socialize, people watch and enjoy some tasty cocktails and delicious food from all the street vendors.

So you can imagine where my head is at? Definitely not in work mode.  Party mode? You betcha. As much as a gal that is practically 36 weeks preggo can be….party animal right here.

What is on my mind is an easy and indulgent dinner that can qualify enough as a date night dinner in dish or fancy enough to impress any dinner guest. I have a secret love for gnocchi. It seems to be the only pasta I gush over. Sorry linguine or fettuccine, but those little potato pillows make me weak in the knees.

This is the perfect meal that is super simple and is how we should all transition from summer to fall. It is warm and comforting yet not super heavy like a chicken pot pie. Don’t worry, I don’t discriminate, I love that dish just as much when there is a chill in the air.

I was inspired to make a parmesan slathered gnocchi after visiting a restaurant here in KC, where I immediately started professing my love to the dish upon my first bite. Weird? Slightly. But you will too after that first fork full. Tender gnocchi pillows are tossed in a light parmesan sauce. Even though there is only a few ingredients, the flavor is robust and full. To enhance the gnocchi, I love to cook it in chicken broth rather than water. This is my secret for cooking pasta, simmering veggies or anywhere water is called for in a recipe! After the gnocchi is toasted slightly. Another trick up my sleeve. Slightly crispy edges against a puffy interior. Insert heart emoji. Then a simple parmesan sauce is whisked together and tossed with tender kale for a bit of nutritional punch. Spinach works pretty darn well too but I just love how kale keeps a bit of body as it’s cooked.

Ingredients

  • 1 pkg uncooked gnocchi
  • 1 quart of Swanson's Low Sodium Chicken Broth
  • 1 1/2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons all-purpose flour
  • 1 1/2 cup almond milk (or milk of choice)
  • 1 1/2 cups kale, roughly chopped
  • 3/4 cup freshly grated Parmesan cheese + more for garnish
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large pot bring the chicken stock to a boil. Add and cook gnocchi according to package instructions; drain well.
  2. Heat olive oil in a saucepan over medium-low heat. Add garlic and cook for 1 minute.
  3. Whisk in flour until lightly browned, about 2 minutes. Gradually whisk in milk, and cook, continuing to whisk, until slightly thickened, about 4-5 minutes.
  4. Add kale and cook until wilted, 1-2 minutes. Stir in Parmesan until melted. Gently fold in gnocchi and toss to combine. Season with salt and pepper, to taste. Serve immediately served with a bit of parmesan sprinkled on top.

    I've actually never made gnocchi before. I've had it in restaurants and loved it, but I've never made it. I think you just convinced me I need to though. Especially with that parmesan sauce!

    Hi you said the gnocci gets slightly toasted but then I didn't see anything about toasting it in the recipe. Can you advise? Thanks! Can't wait to make it.
