How was your weekend? You relax a bit? Attend a football game and scarf down some delicious food? I hope so! As a native to KC, I love sporting some red and yellow for the KC Chiefs, and of course, blue and white for the Royals!
Last year, the Royals came out of nowhere. Surprised every skeptic and made it to the World Series. And this year? Still kicking butt, to everyone’s dismay! Haters gonna hate…
But regardless, I love watching the enthusiasm in our town as game time rolls around. Last year, the hubs went to the world series and he promised me if we made it again, I would get to go. Whoa! But guess when the World Series starts…October 27th. And guess our due date…October 28th. Definitely rethinking that World Series idea…but at least hospitals have TV’s!
With all the fall get togethers going on, not to mention some birthday celebrations thrown in, I am thinking fall inspired treats are mandatory. But these don’t scream sugar or dessert. It is just a perk…
The base of this recipe is my fool proof homemade pretzel bread. We all swooned over it so much, that I knew it would not be the last time pretzel bread appeared here on da blog. And I told you to be on the outlook for more pretzel recipes. So here you go! Pretzels bites; made over into my latest fall obsession.
The dough of these pretzel bites come together in no time thanks to instant rise yeast. My pretzel bread uses regular yeast, requiring two rises. But by utilizing instant yeast, the second, long rise is not needed. Which means, these babies come together quickly! After the dough comes together, you roll them into 12 inch long ropes, slice them into bites then they get a quick soak in boiling water. This is what helps give pretzel bread that notorious crunchy exterior and chewy inside.
While the pretzel bites are irresistible, the glaze is just as good! A local apple patch makes out-of-this-world apple cider (and donuts too!), so when I picked up a container of it at the store last week, we have been enjoying it in endless ways. And in a glaze for these pretzel bites may be my best idea yet. It requires only three ingredients and is light enough that it won’t give ya too much of a sugar high!
These pretzel bites are ideal for Meatless Monday while watching any of the big games! We love bar food type snacks and pretzels go hand in hand for watching the big game! Not only are they suitable for tailgating and Meatless Monday, but they are also made over with Silk Cashew milk! Ingredients
- Pretzel Bites:
- 1/2 cup Silk Unsweetened almond or cashew milk
- 1/2 cup apple cider
- 2 tablespoons coconut oil (or butter)
- 1 tablespoons Truvia Brown Sugar or 2 tablespoons brown sugar
- 1 envelope instant rise yeast
- 2 teaspoons salt
- 1 1/2 teaspoon cinnamon
- 3 to 3-1/2 cups all-purpose flour
- Boiling Solution:
- 4 cups water
- 1/4 cup baking soda
- Egg Wash:
- 1 egg, lightly beaten
- Apple Cider Glaze:
- 1/2 cup powdered sugar, sifted
- 1/4 cup apple cider
- 1 teaspoon cinnamon
- Sea salt, for garnish, if desired
Instructions
- Pretzel Bites:
- In a saucepan or microwave-safe bowl, heat the milk, apple
cider and coconut oil until warm, between 120° to 130°F. - In the bowl of a mixer or a large mixing bowl, add the milk mixture.
- Add the undissolved yeast and brown sugar to the milk mixture and stir.
- Stir in salt, cinnamon and 2 cups
flour, beat for 3 minutes. Slowly add enough remaining flour to make a soft dough. - Transfer dough to a floured surface and knead until smooth and elastic, 3 to 5 minutes.
- Place in a greased bowl, cover with a towel and let rise for 10 minutes.
- Preheat oven to 400°F. Line two baking sheets with parchment paper. Set aside.
- In a large saucepan, combine the water and baking soda. Bring to a boil.
- Divide the dough into 6 equal pieces. Roll each ball into 12-inch long ropes. Cut the rope into 1 1/2 inch pieces to make small bites.
- Add the bites to the boiling water, about 8 to 9 pieces at a time, and boil for 20 seconds. Remove from water with a slotted spoon and place on prepared baking sheet. Repeat with remaining bites.
- Brush with egg and place in preheated oven and bake for 11 - 13 minutes or until the bites are evenly browned. (This may vary depending on how small or large you make your
bites .) - Remove from pan and cool on a wire rack.
- Glaze: In
small bowl, whisk together the powdered sugar, apple cider and cinnamon. - Once bites are cooled a bit, gently toss each bite in the glaze. Garnish with sea salt, if desired.
- Serve immediately.
