Most days (read that as nearly all days now) the idea of real food during the day seems daunting. The idea of making a real lunch stresses me out. Not because I don’t have the desire to get into the kitchen, but because I have a three month old demanding tummy time, to be cuddled with and a never ending to do list. Hello motherhood. Glad you have shown your true colors.

So, those days that I just have time for a quick bite to keep me going, energy bites keep me going.

Cranberry White Chocolate Energy Bites are highly addicting and could pass as a healthy dessert! Tart cranberries mixed with white chocolate, oats, cinnamon and honey for a wholesome snack!

Full of wholesome ingredients.

Sweet.

A dessert in disguise.

Filled with creamy white chocolate.

Cinnamon filled.

And completely popable.

These energy bites are nothing new, as if you were to search on Pinterest or google for energy bites, you would discover thousands of recipes with thousands of variations. I have quite a few on this here blog! From peanut butter cup, to pumpkin, to a trail mix version! And if you were to come over to my house, 99.9% of time, you will find a container filled with them hiding in my fridge. They are my go to when I want a quick snack or feeling my sweet tooth striking. Since both of those scenarios happen quite often, these energy bites are my saving grace.

They start with wholesome oatmeal, then I add in tart dried cranberries, creamy white chocolate, honey and a pinch of cinnamon which elevates these bites to the next level! It provides that somethin, somethin that makes you coming back for more. As if I need another reason to snack on these energy bites all day long..

meal prep tips:

  1. no bake energy bites are the ideal snack to have waiting for you in the fridge! Add them to your meal prep days for those moments when you a need a little energy boost.

  2. I love to roll these bites into smaller balls so I always have a healthier sweet tooth option!

  3. Looking for other options to enjoy these? crumble up and toss on top of yogurt, smoothies or ice cream!

Ingredients

  • 11/4 cups old fashioned oats
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup honey
  • 1/4 cup dried cranberries
  • 1/4 cup white chocolate chips

Instructions

  1. In a medium mixing bowl, add the oats, flaxseed, cinnamon and salt mix.
  2. In a microwave safe bowl, add the peanut butter and honey. Microwave for 30 seconds. Stir. Then add to the oat mixtures along with the cranberries and white chocolate.
  3. Mix well.
  4. Roll into 20 bites.
  5. Store in an airtight container.

Notes

*If mixture is too sticky, chill in refrigerator for 10 to 15 minutes, then roll into bites.

    These sound SO delicious and SO perfect for a new mama. I've got a 10-month-old, so I know how you feel about not wanting to make any real food during the days and relying on quick, easy, delicious and healthy bites of things to get you through.     I need these hanging around when my sweet tooth gets really bad (I try so hard to keep my sugar intake down because I have a chocolate problem!) Love the use of white chocolate and cranberries!

    Hello motherhood indeed. Typically I go for a spoon of peanut butter if necessary. Only takes a second. But I like your idea better :) putting these together during nap time!

    Confession! Never had any kind of these before! I am a cranberry fanatic so I thought why not try them! OMG why have I kept these out of my life! They are so good! So easy to make too! I'm glad I took the energy ball plunge!

      Hi Judy, I am sorry I am confused on what flour you mean as there is no flour used in this recipe. There is rather 1 1/4 cups oatmeal. Sorry I cannot help more.

        Thanks Meg, I meant to say oatmeal. The recipe that first appears on Pinterest says 2 and 3/4 cup oatmeal. When you click on “make it” it lists oatmeal as 1 and 1/4 cup. Thanks for clearing that up.

      Almond butter would be really tasty or really any another nut butter or sunflower butter for it to be nut free if you wish!
