I couldn’t be any more delighted to see you again. You bring a smile to everyone’s face! Usually greeting us with a cocktail but I will gladly take your presence without one.

Despite working at home and my job never really turning off, when Friday’s roll around, I feel a sigh of relief. I like to take the weekends to relax, set blogging aside and spend quality time with my hubby, family and friends! Don’t get me wrong, there are weekends I work all day, but I have tried very hard this year to cram everything into the weekdays. Much like my days in corporate America. Kill myself during the week to enjoy the weekend.

Work hard, play hard!

Despite whatever day of the week it is, my morning time is by far my beloved time of the day. Things move slowly and I love the silence before the hustle and bustle of the day beginnings. For the past few months, Mr. HIT and I have gotten up together, fixed our usual breakfasts and talked over a cup of joe. It has become our morning time that sets the tone for the day.  One morning this week I actually slept in while he got up and dressed for the day. I was out. Like a rock. Didn’t budge. I think at one point, Mr HIT was trying his hardest to wake me up. He confirmed he enjoys me up in the mornings with him. Whether it is because I make thee perfect egg sammies or for my sheer presence, I am going with the latter of the two!

No morning is complete without a cup of joe in our house. It gets our wheels turning. Puts a little pep in my step before tackling a day of recipe testing, photographing and writing. I wouldn’t want to see what my day is like without it. Let’s all agree to not go there, mmmmkay?

Thank you to modern day technology, we set our coffee machine the evening before to grind and brew our coffee around 6 am. It reminds me of those coffee commercials from years ago to waking up to the strong aroma of coffee floating through the house. As we wake, our coffee is ready to be poured and sugared up. Lately, we have been using McCafé coffee, which is made with 100% Arabica beans. The full aroma and with 8 flavors to choose from, our morning cup of joe is never boring! I simply wondered the aisles of my local Walmart to the coffee aisle, picked up a bag of McCafe and vanilla syrup. I also picked up the almond milk and whipped cream there too! One stop shops make for one happy gal.

{Boozy or Not} Whipped Caramel Macchiato-6

To spice up our cup, since its Friday ya’ll, I have taken my favorite coffee house drink and made it over. A typical Caramel Macchiato is an espresso drink with steamed milk on the bottom, flavored with a bit of vanilla syrup, then ‘marked’ with the espresso on top. And to finish it off, gooey caramel is drizzled on. The caramel first hits your lips for that sugar rush, then the robust espresso then the sweet vanilla milk finishes off on another sugar note. It was my drink of choice that I loved during my barista days.

While I don’t enjoy them on the daily anymore, I can make The HIT Files version any day! I take almond milk and warm it with a bit of vanilla syrup, top it with freshly brewed McCafé coffee, next comes the creamy whipped cream and drizzle with fresh caramel syrup. And if you are feeling feisty (it’s the weekend after all!), add a touch (or heavy handed pour) or whipped vodka!

I won’t judge.

Ingredients

  • Double Strength Coffee:
  • 4 tablespoons McCafe ground coffee
  • 16 ounces cold water
  • Drink:
  • 2 ounces sugar free vanilla syrup
  • 2 ounces whipped vodka, optional
  • 1 cup unsweetened almond milk
  • Whipped Cream
  • Caramel Sauce, to drizzle

Instructions

  1. Brew the coffee with the with the measurements above.
  2. Meanwhile, In the bottom of two coffee cups, add the vanilla syrup, whipped vodka (if using) and almond milk. Swirl around to combine. Microwave for 1 minute (or more if you like your coffee really hot) to warm up.
  3. When coffee is done brewing, slowly pour the coffee on top. Be sure not to mix the coffee and the milk mixture (this is what makes it a macchiato). Then add the whipped cream and drizzle with caramel syrup.
  4. Enjoy immediately!

Notes

i]This would be delicious using my [Iced Coffee Recipe too! Rather than warming all the ingredients up, serve over ice! [/i]

    When I worked as a cook in a restaurant, I almost always had to work Sat and Sun shifts. Yet, Fridays still seemed exciting. I don't know why that is. These look great and I would definitely be choosing to add booze to mine! :-)

      I use to drink 3 cups! With almond milk and stevia...not black! My husband started giving me crap but lately I am lucky if I get two cups in! Happy Weekend to you too pretty lady!
