Is this what heaven is?

I feel donuts, vamped up donuts mostly, have really come into the spotlight the past few years. I mean, they are sought after destinations for tourist or just donut connoisseurs.  The flavors of donuts have gotten ridiculous lately. Have you seen the flavors out there? Brioche donut topped with chocolate mini balls from Bouchon Bakery in California and chocolate cake donut with a pink marshmallow glaze from Voodoo Doughnut in Portland.

It may be for the good that I do not live near either of those. My wallet and pants thank me.

But that hasn’t stopped me from curing my donut craving. It all started with Samoa donuts with a 5 caramel sauce then I moved onto Thin Mint Donuts. Girl Scout Cookies + donuts = a very good thing.

The base of these donuts is the same for all of them. They start with a vegan buttermilk, which is just almond milk and lemon juice, to ensure the acidity off balances the sugar.  The base is sweet but not overly sweet. We have the toppings for that! Then whole wheat flour helps to ensure you that 2 or 3 won’t break the bank!

With my favorite foodie holiday approaching (hello Cinco de Mayo!), I thought to reinvent a classic Mexican dessert, Churros!  With a dessert that is doughy and covered in cinnamon and sugar, who can say no to that?!

Before the donuts bake, the pan is coated in a cinnamon sugar mixture, the batter goes in and they are finished off with one more sprinkle cinnamon sugar goodness. No nook and cranny is left behind!

But the donuts just seemed bare. It got me thinking of the irresistible, warm and buttery trips I took to the mall when I was younger, indulge in the pretzel shops cinnamon sugar coated donut and dunked it into their cream cheese sauce. Perfection.

So while the donuts bake, a lighter cream cheese glaze is whipped up.  Drizzle or dunk your cinnamon sugar donuts into the glaze and be ready for your mouth to water.

Ingredients

  • Donuts:
  • 3/4 cup almond milk
  • 1 teaspoon lemon juice
  • 1 cup + 2 Tbsp whole wheat flour
  • 1/4 cup truvia
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 tablespoon ground flax seed
  • 2 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • Cinnamon Sugar Mixture:
  • 1/2 cup truvia
  • 1 teaspoon cinnamon
  • Drizzle:
  • 2 ounces reduced fat cream cheese, softened
  • 1 tablespoon almond milk
  • 2 tablespoons truvia

Instructions

  1. Donuts: Preheat oven to 350 degrees. Grease a mini donut pan.
  2. Mix almond milk and lemon juice and let it sit for 5 minutes to make the buttermilk.
  3. In a large mixing bow, add the flour, sugar, baking powder, baking soda, cinnamon salt and flax seed. Stir until combined. Add the coconut oil and the almond milk and mix just until combined.
  4. Cinnamon Sugar Mixture: Combine the truvia and the cinnamon for the cinnamon sugar mixture. Sprinkle half of the mixture into the molds of the donut pan, sprinkling evenly.
  5. Use a piping bag or ziplock bag with one corner cut off to pipe the batter into your prepared pan, filling each one about 2/3 full. Sprinkle the remaining cinnamon sugar mixture on top. Bake for 6-8 minutes, or until donuts spring back when touched. Allow to cool for 5 minutes in the pan then move to a wire baking sheet to finish cooling off.
  6. Drizzle: Meanwhile, mix the cream cheese, milk and truvia until combined well. Set aside until donuts are cooled.
  7. When donuts are cooled, drizzle the cream cheese frosting on top. Enjoy!

    Are you serious with these donuts? They look insanely devious! SO good that I wish I could jump through the screen and grab a handful. I've seen these extravagant donut places, but honestly some of the donuts are to crazy for me. I love simple tasty donuts and these look perfect! Gonna make these asap! Pinned!! ;-)
