I made this Power Kale Salad out a ‘clean out the fridge’ effort.  Don’t you love it when accidental successes happen? I had copious amounts of kale, red peppers, purple cabbage and carrots lying around. Rather than finding individual recipes to use them for, I threw them all together and hoped for the best! And I couldn’t be happier with my creation. 

I welcomed this vibrant, fresh kale power salad that makes me feel just as good on the inside as this salad appears on the outside. The colors. The flavors. Everything! Did I mention the colors?

Kale Power Salad

Ingredients you’ll need for this Rainbow Kale Power Salad Recipe: 

  • Kale
  • Red Bell Pepper
  • Carrots
  • Purple Cabbage 
  • Broccoli
  • Chickpeas
  • Peanuts 
  • Peanut Butter 
  • Olive Oil
  • Lime Juice
  • Dijon Mustard
  • Maple Syrup 
  • Garlic Powder
  • Salt
  • Pepper

How to make this Kale Power Salad

I love this power salad recipe because kale holds up so well to dressings that it makes it ideal to dress before, let sit then enjoy later! Even a day or so later, this salad tastes wonderful! The key to kale is to massage it (sounds funny I know) to help soften and make the kale less bitter. 

To make simply: 

  1. Toss all kale, red bell pepper, carrots, cabbage, broccoli, and chickpeas together in a large bowl. Set aside.
  2. Make the dressing by adding all ingredients to a blender and process until smooth and combined. 
  3. When ready to serve, add 2 tablespoons, per serving, over the salad and toss. Top with chopped peanuts.

Can I serve this as a main dish or side dish?

You can do either! This salad is hearty enough to serve just as it is; thanks to the chickpeas for providing protein, veggies for fiber and the peanuts for healthy fats and additional protein. But if you wish, you could add grilled chicken, shrimp, etc!

What else can I use the Peanut Dijon Dressing on? 

I am so glad you asked because it is delicious on this Chicken Salad that has fresh blueberries and goat cheese! Usually, peanut dressings are paired with Asian flavors but with the addition of maple syrup, it takes on a sweet and savory flavor that pairs wonderfully with veggies and fruit.

How to store this Kale Power Salad

The best way to store this Kale Power Salad is in an airtight container in the fridge for 4-5 days. This is a great opportunity to meal prep for future lunches and dinners. Simply divide the salad into individual containers. You can choose to add the dressing and massage the kale (helps to soften the kale and make it less bitter) or dress before enjoying it!

Ingredients

    Salad:
  • 1 large bunch kale, finely chopped
  • 1 red bell pepper, diced
  • 1 1/2 cups julienned carrots
  • 1/2 head purple cabbage, sliced
  • 2 cups finely chopped broccoli florets
  • 1 (14.5 ounce) can chickpeas, drained & rinsed
  • 3/4 cup peanuts (I use roasted & salted, but if you prefer unsalted, use those)
  • Dressing:
  • 2 tablespoons peanut butter
  • 1 tablespoon olive oil
  • 1/2 lime, juiced
  • 3 tablespoons water
  • 1 tablespoon dijon mustard
  • 1/2 tablespoon maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 teaspoon garlic powder

Instructions

    Salad:
  1. Toss all kale, red bell pepper, carrots, cabbage, broccoli and chickpeas together in a large bowl. Set aside.
  2. Dressing:
  3. In a small blender, add all ingredients for the dressing. Process until smooth and combined.
  4. When ready to serve, add 2 tablespoons, per serving, over the salad and toss. Top with chopped peanuts.

Notes

*This salad is perfect to make ahead, store in the fridge, then drizzle the dressing on when ready to eat!

      In all honesty, I am not sure as ours has made it a week tops. ! I have made it twice because the first one lasted only a couple days but the second has been about a week thus far. I would say a couple weeks in the fridge.

    I found this yesterday on Pinterest and made it tonight for dinner. The second we finished eating I got up and made another batch of the dressing and prepped more veggies so I can make it again tomorrow! It's my new favorite salad!

    Wow! Just meal prepped this for the first time. Doubted whether it could actually be as tasty as it is pretty (and healthy), but it is!! I predict this will become a regular staple in our home. Sent some in my teenage son’s lunch, and he really liked it too. I did make extra dressing.

    I’m making this tonight! Can’t wait to try it. Do you use unsalted peanuts or roasted and salted? Also, the garlic.. is it powder or fresh?
