This past year, I have taken up reading as a way to show myself self care. It has proven to recharge my batteries so I can be the best mom, wife, daughter and friend I can be. Being a stay at home mom, someone that runs her own business and a Type A that is OCD about a clean house, I have a tendency to overlook my own needs. My free time? Binge watching Bravo and walking the aisles of Target just looking for new finds to throw into my cart.

I have not shared every aspect of my life, despite sharing on the blog most days, I am a rather private person. I struggle letting people in to see the real me. But over time, my walls break down. Therefore, I struggle with my own worthiness. Like many women, the constant bombardment of society media and messages telling us “who, what, and how we should be.” She guides us how to ignore the thoughts of what others think and how to believe you are worthy and belong just as you are.

Rather than powering through when those moments of stress come, you set your intention, find something inspiring and then get going! A new type of Dig Deep. I have incorporated this new Dig Deep and it has fully recharged my batteries when I find myself stretched too thin. I encourage you to find your own way. Whether that be getting lost in a book, watching a movie or just sitting enjoying the silence. Whatever it is, be intentional about it! I encourage you to see how it recharges you.
Another way to recharge my batteries is to feed my soul. Whether that be with wine or a nutritious meal. And this Avocado Bruschetta Chicken Salad Bowl fits the bill. I have a major love of bruschetta chicken recipes and while I love bruschetta pasta and bruschetta toppings, I decided a gigantic salad bowl was the way to tie me over all afternoon long while chasing my little man around.
Over the holidays, I made a bruschetta dip that my family raved over. Think classic bruschetta minus the work of topping the crostini. Rather let people dip, dip, dip! In case you are intrigued, I will be sharing the recipe very soon!
In effort to use up the leftover bruschetta dip, I took quinoa, greens, grilled chicken, and creamy avocado, and threw them all into a massive bowl. I like big salads and I cannot lie. And what resulted was a hearty, flavorful and extremely delicious bruschetta chicken salad that is perfect for meal prepping!!

Yields 4
Ingredients
- 1 pint cherry tomatoes, diced small
- 6 large basil leaves, thinly sliced
- 1 glove garlic, minced
- 1/2 tablespoon extra virgin olive oil
- 2 teaspoons tablespoon balsamic vinegar
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- 1 cup uncooked quinoa, rinsed
- 4 cups mixed greens
- 1 pound cooked chicken, sliced
- 1 avocado, sliced thin
- Parmesan
- Handful fresh basil leaves, sliced thin
- 1 baguette, sliced thin and toasted
- Balsamic glaze or dressing
Instructions
- In a small bowl, combine the tomatoes, basil leaves, garlic, olive oil, balsamic vinegar, sea salt and pepper. Stir to combine. Cover and place in refrigerate for a couple of hours for flavors to combine. This step is not mandatory but highly recommended.
- Cook the quinoa according to package instructions.
- When quinoa is done, divide the quinoa, greens, chicken, and avocado between 4 bowls. Top with bruschetta topping, parmesan, fresh basil leaves, baguette slices and balsamic glaze.
