While skittles are good and all, let’s taste the rainbow in a healthy way! Just look at those colors!

With Easter only a few days away, do you have your menu all planned out?

Are you making a big brunch shindig or having a later afternoon lunch? This year I am heading to my in laws for an Easter lunch. While I do love brunch (who can you say no to cinnamon rolls, donuts and baked cheesy egg casseroles?!), but a stress free lunch complete with a table full of smoked meats, my MIL’s famous cheesy potato casserole and honey glazed ham ( < OMG.) has my mouth already watering.

One thing I will be coming with in tow, is this fruit salad. Those colors are the healthy take on tasting the rainbow! Who would say no to this? It branches between brunch, lunch or dinner with ease making it the perfect party plate. Or for an afternoon BBQ since you know they are just around the corner!

With the weather getting warmer, I cannot get my fill of fruit. Any fruit. Bananas, blueberries, strawberries and mostly grapes. We buy a 4 pound container at Costco and within a few days, it is gone. Vanished. Right into my tummy! There can be worse things to binge on, right?

This is no ordinary fruit salad though. You can pick those up at the local grocery store and they are great for parties where finding shortcuts in preparation is key. But this colorful salad is tossed with a 3 ingredient, honey basil dressing.  The sweetness of the honey and the savoriness of the basil pairs perfectly with the fruit.

What I love the most about this salad is how easy it is to put together. Just a bit of chopping and dicing.  Plus you can use any fruit you have on hand; bananas, berries, grapes, peaches, mangos! Pick you faves and get dicing!

Ingredients

  • 2 cups diced strawberries, diced
  • 2 cups blueberries
  • 2 cups raspberries
  • Dressing:
  • Juice of 1 lemon
  • 1 tablespoon honey
  • 3 basil leaves, finely chopped

Instructions

  1. Wash the fruit and place in a large serving bowl.
  2. In a smaller bowl, whisk together the ingredients for the dressing.
  3. When ready to serve, pour the dressing over the fruit and serve immediately.

    I love skittle too, but this is SO much more my kinda rainbow! Just looking at these photos makes me feel like Summer is coming! We're moving on easter ( whomp whomp) so Chinese food takeout for us. Judge me ;) Pinned!

    Are you reading my mind?! I have a box of Skittles laying around and I was thinking about the whole "Taste the Rainbow" and how I can work it into a salad. I might have to use them in desserts, but this salad sounds really amazing. I like the touch of fresh basil!

    This looks stunning and much better than skittles (I'll only eat the red and green ones anyway). And that dressing. I want to swim in it! This year we are going out to brunch at this fancy schmancy place that holds a brunch buffet only on Easter, so I'm excited. It's also the day after my daughters birthday, so we might be *ahem* balancing it all out with leftover birthday cake
