WAIT! Before you run off , if you haven’t already, because you came to the realization that I am slightly ‘out there’ and talk to myself, I pinky swear this is a winner. Like winner, winner chicken dinner!

Pasta. Oh pasta why are you so freakin delicious, comforting and sooooo not bathing suit friendly?! Why can’t we all just live in a make believe world where calories don’t exist and unicorns run free?  Is that so hard to ask for?

Now what is believable andddd is swimsuit friendly is this Cajun Alfredo Skillet!  I even dare to say it’s purdy darn healthy for you as well. With a few switch-a-roos, I have said see ya to the fattening sauce, and pumped up the protein and fiber content, all will giving you some insane cheesey goodness.

Yes, you read that right. A sauce of almond milk and cottage cheese replicates the creamy texture that heavy cream usually provides.  And what is alfredo without cheese?  Gimme all the cheese! Shredded, salty and ultra silky fontina is melted into the sauce and a touch of garlic and cajun seasonings are blended in to add a punch. Whoa…creamy and spicy all in one bite.

Ingredients

  • 8 oz pasta, cooked according to package's instructions (gluten free, if needed)
  • 1 cup chopped peppadew peppers
  • 1 cup diced cherry tomatoes
  • 1 small red onion, diced
  • 2 tablespoons butter
  • 2 tablespoons Tapioca Starch or Cornstarch
  • 2 cup unsweetened almond milk, (or fat free milk)
  • 1 cup reduced fat cottage cheese
  • 1 cup fontina, shredded
  • 4 teaspoons cajun seasonings
  • 2 teaspoons garlic powder
  • Cilantro, for garnish

Instructions

  1. Melt butter in large skillet over medium heat. Add red onion. Cook 5 minutes or until opaque. Stir in tapioca starch until it coats the onions and butter is fully absorbed.
  2. In a blender, puree milk and cottage cheese until well blended and smooth.
  3. Add milk mixture to skillet and whisk until fully incorporated.
  4. Add peppadew pepper,tomatoes, cajun seasoning and garlic powder. Stir well.
  5. Slowly whisk in fontina cheese and whisk until cheese is fully melted. Stir in pasta.
  6. Turn on broiler to high. Add pork to top of pasta. Place skillet under broiler for 2-3 minutes, or until pork is crisp and heated through.
  7. Garnish with cilantro and serve immediately.

      The pork is leftover from when we smoked pork. I would suggest going to to store and getting pulled pork from the premade section.

      OH isn't fontina so dreamy and creamy?! ha. I hope you luv it! And wish I had too many marg's with you! They would have gone perfectly with my nachos...see dinner date right there! And the cajun seasoning I used was Louisiana Fish Fry Products...its an orange bottle! Enjoy :)
