You didn’t think I would let summer go by without a margarita, did you?
No, no, no. I did not consume all these like I was dying to.
Confession. Margaritas are my favorite summer cocktail. And being preggo during this heat, really makes me one of these juicy drinks. But just to think, just over two more months (!!) until I can sit back and (slowly) sip on these!
So tell me, what is your favorite cocktail? Are you a beer person, a wino, or a simple vodka-club sorta person? Don’t be afraid to raise your hand to all three. There is a time and place for all three, and I am not ashamed to say I fall into all of the categories at some time! Tailgating for a baseball game? Just hand me a Summer Shandy. Enjoying a date night out, Pinot Griogio please! Or a rare night out on the town, vodka club with a lime por favor.
But when the sun is shinning, and its 5 o’clock somewhere you bet I am juicing some limes and adding salt to the rim of a cocktail glass. With the abundance of summer fruit available, I couldn’t turn down creating another fruit infused margarita. Bonus points for enjoying fruit in my beverage? I think so.
Since it looks like I consumed a whole watermelon and I can’t stop eating it, I thought why stop there? Add it a cocktail! It happened to be perfect timing as IZZE just debuted their new line of sparkling water. Which we all know how much I love sparkling water. It takes your water up a notch. Making you feel sophisticated if you will! And not to mention, cures that craving for a soda that I generally crave. IZZE Sparkling Water is full on bold true-to-the-fruit flavors. With Blackberry Pear, Mandarin Lime and Raspberry Watermelon, I can see many lighter beverages (and cocktails!) in our future! With their pure triple-filtering mountain spring water, which eliminates any impurities for the cleanest, freshest sparkling taste. With a base so pure, you know it’s a good start to any drink!
This drink is a cinch to make. We start with a simple syrup, which is just a sugar water essentially. I lightened it up by using Truvia, then pureed fresh watermelon. This is where it is so important to use watermelon that is uber juicy and full of flavor. None of that lackluster watermelon you sometimes get and are instantly heartbroken. I heard you can even find watermelon juice at Trader Joe’s! Thinking I need to make a run this weekend…
Mix the pureed watermelon, tequila, simple syrup in a cocktail glass with a good squeeze of lime juice. Then add a topper or Izze Raspberry Watermelon Sparkling water, give it a good whirl to ensure the tequila is fully mixed in and bottoms up!
It’s 5 o’clock somewhere, right?

Yields 4
Ingredients
- Simple Syrup:
- 1/2 cup water
- 1/4 cup Truvia, or 1/2 cup regular sugar
- Margaritas:
- 6-8 cups cut up watermelon (will depend on large you cut your watermelon, need 2 cups juice after pureeing)
- 6 ounces tequila
- 1 bottle Izze Raspberry Watermelon Sparkling Water
- 2 Limes, cut into wedges
- Garnish:
- Raspberries
Instructions
- Simple Syrup: In a small saucepan, combine the water and Truvia. Heat to a boiling, then remove from the heat and let cool.
- In the meantime, add the watermelon to a blender (if using cut up watermelon). Puree until smooth. Put puree through a fine mesh strainer to catch the pulp.
- In the 4 cocktail glasses, add ice. Add 1 ounce (2 tablespoons) simple syrup, 1 1/2 ounces of tequila, 4 ounces watermelon puree, juice of one lime wedge and top with 2 ounces sparkling water.
