I really tried this year to get some St Patrick’s Day recipes in for you.
But you see, I am not really the Corned Beef and Hash sorta gal. And Bangers and Mash really doesn’t do much for me. Although, as I think about it. I sure do love a big creamy bowl of Baked Potato Soup. Ugh.
It was the thought that counts right?
But! I do have some mint and chocolatey desserts for you!
Does a cookie make up for it? Or maybe a donut is the way to your heart? I thought one of those would work.
Phew.
Although I usually stand on the peanut butter and chocolate team for desserts, or the fruity and sugar cookie team during the warmer months (Hello Spring!), I have found myself routing more and more for mint lately! I can see what all the hype has been for the past few years with Thin Mint cookies. That refreshing mint meets the decadent chocolate. Pure bliss.
I had a craving for more mint after yesterday’s donuts, so mint cheesecake was born! A lighter spin on cheesecake as I used reduced fat greek yogurt cream cheese. I love that stuff. Lower fat and higher protein than the other low fat cream cheeses. If you can’t find this, don’t worry, low fat cream cheese will work just fine. We don’t discriminate.
Rather than loaded it up with powdered sugar, I swap in Truvia that goes for a whirl in the blender to turn it into low sugar, powdered sugar. That means we get more right? So you are on board?
And you didn’t think those chocolate chip cookies from last week were done making an appearance did you? Maybe you understand more of my frustration with all my cookie failures when really that recipe had a two tiered approach. First, cookies. Second, Mint Cheesecake Sandwich cookies!
The tender whole wheat chocolate chip cookies have the perfect ratio of chewiness to crispness, so they hold up with each bite and do not spill all the delicious filling all over you. While it is still tasty, sticky fingers are not desirable.
Now, mint cheesecake filled chocolate chip cookies are desirable. Now, go get your Tuesday on with some cookies!

Ingredients
- 20 Chewy Chocolate Chip Cookies , gluten free cookies if needed
- 4 oz low fat cream cheese, softened
- 1/2 cup whipped topping
- 1/2 cup organic powered sugar
- 1/4 teaspoon mint extract (more or less depending on how strong you like it)
- A couple drops of green food coloring
Instructions
- Cookies: Prepare cookies and let cool.
- Add a 1/2 - 1 teaspoon filling to each cookie. Spread out into a smooth layer. Add another cookie on top to create a sandwich. Repeat with all cookies and filling. Enjoy!
