What a weekend.
To soothe the pain, I am going to drown my sorrows in sugar.
Despite not being the biggest basketball fan, it’s hard not to get excited around March Madness. The parties, the food, the company, the excitement….I love it all.
Except. Except when our team loses. Oh man. The words that fly out my fiancés mouth. Enough to make me walk slowly out of the room and enjoy the game from the comfort of another room…in silence.
Needless to say, my family is very, um, vocal, during Kansas basketball games. They live and breathe for the season.
It’s like Christmas morning for them every time tipoff approaches.
After yesterday’s {pathetic} game, some comforting was in need. These cute little cookies came to the rescue.After devouring my first batch of cookie dough, I knew it wouldn’t be long before I was whipping together another batch.
But since I have a cook’s curse of never making the same recipe twice, I knew this insanely delicious recipe called to be fancied up.
Yes, it’s delicious with strawberries, graham crackers and animal crackers. I was dying to stuff it between two soft and sweet whoopee pies since seeing Cookie Dough Stuffed Oreo’s. Oh the torture.
Until now. We couldn’t keep our paws hands off of them. Sweet, soft and only tasted sinful. The whoopie pie cookies came from the, oh so talented, Katie at Dashing Dish. I have been in such awe of her recipes, talent and positive vibe for many years. I have tried many, many, many of her recipes and yet to come across one I could go without.
She recreates guilt free foods of your favorite indulgences, all while making them healthier by using oat flour and coconut flour; both of which I love to use in the kitchen. All her recipes are nutritional powerhouses. So when it came time for whoopie pies, I knew her recipe would be a winner (as we all know, I am not blessed in the baking world!)
So go ahead, grab another bite of cookie dough! It will be our lil secret!

Ingredients
- Whoopie Pies:
- 1 1/2 cups oatmeal
- 1/2 cup unsweetened cocoa powder
- 1 cup baking stevia
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened applesauce
- 2 large eggs
- 1 tsp vanilla extract
- 1 Batch Skinny Cookie Dough
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with a silicon mat, or parchment paper sprayed with non-stick cooking spray.
- Add oatmeal to blender. Process until flour consistency. Transfer to mixing bowl. Add cocoa powder, baking stevia, baking soda, and salt. Mix well.
- Add applesauce, eggs, and vanilla extract. Mix until well combined.
- Drop cookies into 20 rounds on baking sheet. Bake for 10-12 minutes, or until whoopie pies are set.
- Meanwhile, mix together all ingredients for cookie dough and chill until ready to use.
- Let whoopie pies cool completely. Divide cookie dough into 10 even balls, and place onto 10 of the cookies and place the other cookie on top of each half, making a ‘sandwich’ with two cookies, and cookie dough in the center.
- Place in fridge until ready to serve!
