Let’s have dessert for breakfast!

As a kid, I had a few breakfast go to’s.

Honeycomb. I devoured it once it sat in a bit. Plus you had honey flavored milk. Double win.

Pillsbury Toaster Strudels. Cinnamon Sugar all the way.

Kix. Just can’t stop at one bowl.

Or everyone’s guilt pleasure – Pop Tarts.  Smore’s. Need I say more?

Now that I look back at my childhood favorites, I realize how sugary (and comforting) my breakfast choices were.  What I would give to have that metabolism back! Oh how about a few pounds?  Oh I love aging. Kidding. Sorta…

How often I hear the phrase, “If I could go back to when I was 21 (or whatever age you choose)…those were the days!”

My only thought its – why would I want to go back? I am living life now. My best days are just ahead of me. I married my best friend, had a beautiful baby boy that lights up my world and turned 30.

There is no part of me that would want to go back in time.   Plus, to go through the hassle of college, late night partying, hangovers and attempting to find my way in the real world again? Forget that.

By no means do I have it figured out today, nor tomorrow, but I sure do have the greatest grip on catching my dreams more than ever; more than I did even a year ago.

So what does this sap session have to do with Blueberry Lemon Cheesecake Overnight Oats?!  Well just as when I was little, breakfast still is, and always will be my favorite, meal of the day. What other meal  is so versatile?  From sweets to savory, and even including booze every now and then. You can’t tell me it’s not the ideal meal.

Over the past few years, oatmeal has become one of my favorite breakfasts. It is comforting and can be played up to take on a wide array of flavors! Take a look at a few of my favorites – fluffy greek yogurt pancakes that are freezer friendly. And I can’t forget about banana bread with huge chocolate chunks. Because how can you have a bad day if you start it with chocolate?

Overnight oats have become a savor in my world. My mornings are rather rushed – but whose aren’t?  Since I am morning bird, (you will be lucky to see my awake in the 9 PM hour now adays…). I love to get my work out done first thing.  Yes it is possible people. When that alarm goes off around 5am, trust me I am not super perky and ‘up and at ’em’ but after my morning coffee, I am a bit closer!  So between a morning workout, feeding the babe and getting the husband out the door, I have to stuff my face with a nutritious yet delicious breakfast to keep me fueled until lunch – something my childhood favorite cereal of Honeycomb usually falls short of.

Cheesecake + Oats + Blueberries + Lemon = ah-mazing.  Dessert. Yet, healthy and filled with protein and fiber to get you going in the morning.  I love to throw all the ingredients into a little mason jar the evening before, give her a good shake, then let her work her magic in the fridge overnight.  And then 12 hours later, she is sitting there, in all her glory and ready for me to curb my sweet tooth the next morning!

So spruce up your morning with overnight oats – add strawberries, cinnamon, coconut, chocolate! I am giving you permission to eat dessert for breakfast.

Ingredients

  • 1 cup oats
  • 1 scoop Vanilla Protein Powder
  • 2 tablespoons chia seeds
  • 1/2 cup unsweetened vanilla almond milk (or milk of choice)
  • 1/2 cup fat free vanilla greek yogurt
  • 1 cup frozen blueberries
  • Stevia, Maple Syrup, Honey or Sugar, if desired
  • 1/4 cup light cream cheese
  • 1/4 tsp lemon extract
  • 2 tablespoons sugar free maple syrup

Instructions

  1. Combine oats, protein powder and chia seeds. Stir in yogurt. Divide between two mason jars. Feel free to add in sweetener here, if using.
  2. In a small bowl, combine cream cheese, lemon extract and maple syrup. Stir until fully combined and smooth.
  3. Top oat mixture with cream cheese mixture then blueberries.
  4. Seal mason jars with lid, then set in fridge to let sit overnight.
  5. In the morning, devour!

        What if you don't have the protein powder? What could substitute? I like my oatmeal thicker and not soupy. Did you add milk to the dish in your picture or is that the texture?

          You can leave the protein powder out; I just like the extra protein boost. You can add more oats in its place (1/4 cup). I did add milk and thinned the cheesecake sauce out a bit for picture purposes :) By adding more oats and chia seeds will make your oatmeal thicker!

    Kix!! haha oh my gosh I forgot about Kix ... my sister and I used to love that cereal! And your morning routine sounds just like mine! People think I'm nuts for getting up at 5 but it's the only way I get a workout in during the week! So I have yet to try overnight oats ... so silly because I love oats of any kind and I just never remember to do it. Lemon blueberry cheesecake? Sounds amazing!

      Ohh Kix is STILL one of my favorites! Dry, in a bowl, just for snacking is the way to go! And glad I am not the only one that sees the positive side of getting up at 5am. Then you have your entire evening just to relax! And get on this train, lady!! You will adore them!

    Will this work with fresh blueberries? Should I shake to combine the ingredients? In the paragraph before the recipe you mentions shaking it...Seems like the oats will never get the moisture following the recipe with fresh blueberries... Either way I am excited about this recipe and hope I can get it to turn out right- just picked 37 lbs of fresh nj blueberries and this would be a perfect way to enjoy them!!

      Hi Colleen! I can't say if fresh blueberries would work but I do not see why not. But you did bring up the one thing I believe the frozen strawberries provide - liquid/juice. You can always add more milk to give it more liquid - either before or the next morning before eating. And yes, do stir it up (or shake!). Hope you enjoy!

    This looks like a great tasting recipe...I have one question the oats are dry when you put them in the jars? Is that correct? Does it matter what kind of oats you use? Your photos are very enticing.

      Hi Nancy...thank you! And yes, the oats are dry when you mix them with the remaining ingredients. And I use Quaker Old Fashioned Oats. I have not tested the recipe with other oats so I cannot say if it works with others. Hope you enjoy it!

    This looks delicious!! I love the idea of having breakfast ready to go in the morning. It makes it more likely that I will actually eat breakfast instead of skipping it. My one question is what brand of protein powder do you use? I have been trying different vanilla ones out and they all seem to have somewhat of an odd taste.

        Thank you for the recommendation! I have seen this brand at one of my local health food stores and will have to go pick some up to try. I've noticed when I put the protein powder in my coffee in the morning, I do feel like I stay feeling fuller for longer...I just cannot stand the taste of some that I have tried!

    These came out very dry and firm compared to other overnight oats recipes I have used. Is there supposed to me more liquid added to the oats/protein powder/chia mixture? The greek yogurt alone did not provide enough liquid. Flavor was fabulous!!

      I am sorry to hear that Rebecca. I am guessing your protein powder absorbs more liquid than the one that I use. This is the ratio I use every time so my only guess would be your protein powder is different than mine. I hope you give it a try again and just add more liquid before eating! That should solve your problem. Have a great weekend!

    it sounds and looks delicious, but I have a question. Is the Nutritional info for PER serving or is that the total for TWO servings? I am in Weight Watchers and the Smart Points came out CRAZY high.......like 13 or 14 points..........if nutritional info is the total for TWO servings......then it is do-able..........otherwise..........sadly, I would have to pass.

      Hi Caren, the nutritional info is for one serving. I do not follow Weight Watchers so unfortunately I do not calculate the points. To lower the servings you could cut the cheesecake topping in half, remove the chia seeds or remove the protein powder. The base recipe of oats, almond milk and greek yogurt is all you need then you can add toppings as you wish. Enjoy!

Actually the protein powder and chia seeds would be fine (I would probably still cut the protein powder though), love your idea of cutting the cream cheese in half........that's a super good idea! I still would love to try this sometime when I want to splurge. It looks AMAZING..........and even in it's "normal" form, it's way less than a piece of cake! :)

    I made this last night and am enjoying it now - it really does taste like lemon cheesecake! The recipe doesn't say when to add the milk but based on the comments I added it with the yoghurt. I also split mine into 3 portions rather than 2. Thanks for sharing!
