I have always wanted to be one of those ‘coffee house’ people.

Pretty stereotypical, right? Creative peeps seems to flock to coffee houses. Fancy, strong cups of joe; free wi-fi and if you are lucky, oversized, plush couches. Just bring along that mac book, your thinking cap and a bottomless wallet for that venti double shot extra pump vanilla soy latte.

Being that I work from home and a previous barista during my college days, you would think I would spend hours in my local java joint. But for someone that gets easily distracted, those creative hot spots are a double edge sword. The atmosphere seems to get the wheels turning but with every shout out of a finished drink, creek of the door opening and whistle of the espresso milk frother, my attention darts to anywhere to my work.

Rinse. Repeat. Rinse. Repeat. Then to look down and I have a lousy, five words jotted down.

I have attempted the whole coffee house gig one too many times. I find my creativity flows best, in the morning, right after a big bowl of oatmeal. Hey, like these latte overnight oats!

It’s the best of both morning favorites: coffee and oatmeal. Plus, it’s made the evening before to take the stress of trying to decide what to have in those early hours when you are trying to run out the door or just plan hangry. I speak from experience with the latter…

Overnight oats are not new to this blog. You all proved that cheesecake overnight oats are a crowd favorite! And a close second is a bakery inspired treat, with a gooey cinnamon sugar swirl and all! So today we have a java spiked breakfast because I feel like these days, I need more than one energy boost! Oatmeal is mixed with almond milk, coffee, chia seeds, a touch of sweetener and protein powder if you wish. I love the little boost it provides and staying power. Once that is all mixed up, let it sit overnight for the oats to plump up and soak up that coffee goodness.

The next morning though is when the fun begins. The toppings! Dreamy, creamy almond butter, toasted coconut flakes, chocolate chips, fresh fruit…whatever your little heart desires! Go crazy. These oats will put a little pep in your step like you downed a venti double shot extra pump vanilla soy latte.

Ingredients

  • 1/2 cup quick or old-fashioned oats
  • 1 scoop (30g) vanilla protein powder
  • 1 teaspoon chia seeds
  • Sweetener of choice
  • 1 teaspoon instant coffee*
  • 1 cup unsweetened vanilla almond milk
  • 1/2 tablespoon vanilla almond butter
  • Optional Toppings: Vanilla Almond Butter, Mini Chocolate chips, unsweetened toasted, coconut flakes, ground flax, cocoa nibs

Instructions

  1. In a small bowl, stir together the oats, protein powder, chia seeds, sweetener of choice and instant coffee. Add the vanilla almond butter and almond milk. Stir until smooth.
  2. Cover or add to a sealed jar and refrigerate overnight.
  3. When ready to eat, add toppings of choice on top and enjoy!

Notes

Or 1/2 cup brewed coffee then reduce milk to 1/2 cup
*Cook time refers to chilling time, overnight.
***these oats are great to prepare in bulk then store in the fridge all week for a quick breakfast on the run.

    Oh how fitting seeing as I'm in a coffee shop right now. For me, I definitely enjoy the atmosphere, but my laptop kind of sucks, so I'd never want to be on in every day (iMac, ftw). THESE OATS THOUGH. Best flavors ever.

    I am a coffee junkie, but not into coffee houses... weird, eh? BUT I do LOVE cafes. The outdoor ones where I can sip on my cappuccino and people-watch all day long! :-D Now, about these gorgeous jars of oats... Everything about this is ME and I can’t wait to make a few soon!

    I have too!! But I just can't do it. The over priced drinks get me. Then all I want to do is eat all the giant muffins, but they are never as good as they look. And then there are 25 people around to watch. Never a good scenario for me. I will stick at home, and these oats look amazing! Love something that can be made the night before.
