Lazy Sunday mornings are the cream of the crop of mornings.

We slowly wake up, open up the blinds to the (hopeful) sunshine, venture our way to the kitchen to start brewing a batch of coffee and to whip up a more leisurely breakfast that weekday breakfasts dream to be.  Then to only curl up by the fire with our pipping hot cup of coffee and catch up on our shows that we have missed throughout the week.  Seeing I am morning person, Sunday’s are the mornings I relax a bit with my husband, not worrying about waking up early to add one more thing to my To Do list.

With those lazy mornings, come indulgent breakfasts.  Although we both have our usual suspects, we enjoy Sunday’s to break out of the norm. More often than not it is a new pancake flavor as how can you go wrong with pancakes? They practically allow you to enjoy cake for breakfast with no second looks from someone as you gulf down the sugar laden meal. I thank the person that thought pancakes are acceptable morning fuel. Many mornings have been made complete due to said breakfast.

Cranberry Bliss Pancakes would be perfect for a holiday morning coming up. Remember that one next week? Yup, Christmas! After unwrapping all those presents from Santa, everyone needs fuel to continue Ho, Ho Ho’ing throughout the rest of the day.

If you have ever had the pleasure of enjoying Starbuck’s Cranberry Bliss Bars then you are fully aware to how addicting they are. Vanilla scented blondie, filled with white chocolate chips, tart dried cranberries, orange zest and drizzled with a white chocolate glaze. They are perfectly chewy and 100% impossible to resist.

Today’s pancakes pay homage to those bars that bring me such joy.  The flavors are wrapped into a whole wheat pancake so you won’t feel bad about downing a large stack of cake for breakfast.  The sweet cakes are filled with orange zest and white chocolate chips. Heavenly combination!  And the secret ingredient? Silk’s new CashewMilk!

As a long time lover of Silk Almond Milk, I was ecstatic to get my hands on their new cashew milk. I even dare to say I enjoy it better than the almond milk! It is subtly sweet and ultra creamy due to the cashews.  It is a great swap for any other milk or water in most recipes and works beautifully in these pancakes.

Although the orange scented pancakes are pretty delicious, the greek yogurt glaze is what seals the deal for me. Slightly sweetened greek yogurt and Silk Cashewmilk are drizzled over the pancakes, then sprinkled with more tart cranberries and a couple more white chocolate chips.

For the first time, it is perfectly acceptable to have cake for breakfast!

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoons Truvia
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup fresh orange juice
  • Zest of two oranges
  • 1 3/4 cups Silk Cashew Milk
  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • Glaze:
  • 1/2 cup plain, non fat greek yogurt
  • 1 Tbsp Silk Cashew Milk
  • 2 Tbsp Truvia

Instructions

  1. Pancakes: Preheat a large non stick skillet. In a large bowl, whisk together the flours, truvia, baking powder and salt.
  2. Add the orange juice, zest, cashew milk, egg and melted coconut oil. Whisk just until combined.
  3. Add 1/4 cup of the batter to the skillet, Sprinkle with cranberries and white chocolate chips. Cook until bubbles appear then flip and cook for 30 seconds to 1 minute.
  4. Remove from skillet and repeat until all pancakes are cooked.
  5. Glaze: While pancakes cook: whisk together the yogurt, milk and truvia. Set aside until pancakes are ready.
  6. When ready to serve, top pancakes with glaze and serve immediately.

    These are calling my name. I adore anything with cranberries in it. Plus they are pretty healthy and low calorie. That gives me some extra calories for Christmas cookies later one.

    I love anything cranberry bliss! I made some cookies that were cranberry bliss bar inspired, but I can't exactly go around eating those for breakfast lol. These pancakes however...bingo! YUM!
