Since sharing my pumpkin cinnamon rolls, I can’t get them off my mind.

One problem…consuming them on the daily, doesn’t exactly do a body good. A mind? Oh yes.

And not to mention the kick line performance, the little babe performs after I consume a load of sugar.

One of my favorite ways to enjoy breakfast in the morning is oatmeal. With the endless ways to jazz them up, you are able to consume a different bowl each and every morning.

Up until last fall, I adored scrambled eggs or an egg muffin sammy. But upon finding out I am allergic to eggs, sadly, my morning routine had to change. I found myself reinventing the classic bowl of oatmeal I grew up eating. Oats topped with a bit of milk, too cool everything off, a tad bit of butter and sprinkle of brown sugar! Still reminds me of breakfast with my Mom each morning.

There are far few thins that beat a big warm bowl of cinnamon loaded oats with a cup of joe on a crisp morning. And these Cinnamon bun overnight oats are a lifesaver for those quick mornings when time seems to not be your friend!

Cinnamon Bun Overnight Oats are a cinnamon bun lovers dream! Flavored with cinnamon, a bit of vanilla and greek yogurt! An easy breakfast idea that you can make the night before!

The night before, simply mix together the oats, yogurt, milk, cinnamon and protein powder (if you choose to use), then add to a jar and let the magic happen. What is truly magical is the ability to make a few of these on a Sunday evening, and having multiple breakfasts ready in minutes!

While Blueberry Lemon Cheesecake overnight oats have the flavors of summer, I love the warmth and sweetness of these Cinnamon Roll oats! Perfect for fall, October mornings! Because what is not to love about the gooey, buttery and gooey flavors of a warm cinnamon roll? To bring on the cinnamon roll flavors to our oats, I added plenty of cinnamon, milk and greek yogurt for added creaminess and a bit of Truvia brown sugar for sweetness. But feel free to use regular brown sugar, or even coconut sugar, if that is all you have.

And we all know the gooey center is the best part of a cinnamon roll, so I topped our oats with a cinnamon and brown sugar loaded glaze! It takes a few seconds to whip up but completely makes each bite pure heaven!

Now off to bakery heaven.

  1. this healthy overnight oats recipe is the perfect make-ahead breakfast for a busy week! simply throw together at the beginning of the week, store in individual, sealed containers in the fridge. then your breakfast is ready in the morning!

  2. perfect for on the run mornings and to save a few minutes in the morning even if you are staying around home!

Ingredients

  • 1/2 cup fat free vanilla greek yogurt (your favorite type)
  • 1/2 cup old fashioned oats
  • 1/3 cup unsweetened vanilla almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 2 teaspoons Truvia brown sugar (or brown sugar)
  • 1 teaspoon baking stevia
  • 1 tablespoon vanilla protein powder , optional
  • 1/2 teaspoon ground cinnamon
  • Topping:
  • 1 tablespoon reduced fat cream cheese
  • 1 tablespoon vanilla protein powder or powdered sugar
  • 1/2 tablespoon Truvia brown sugar (or brown sugar)
  • 1/8 tsp cinnamon
  • Dash milk, enough to make topping come together

Instructions

  1. In a small mixing bowl, combine the greek yogurt, oats, almond milk, vanilla extract, brown sugar, sugar, vanilla protein powder and cinnamon. Mix well and transfer to an airtight container.
  2. In another small bowl, combine the cream cheese, protein powder, brown sugar and cinnamon. Swirl or place on top of oats. Seal container.
  3. Place in fridge overnight and remove from fridge when ready to eat!

Notes

*These oats can be prepared days ahead! I love to make a few batches then have breakfast all week long!

    I have to admit that I've never tried oatmeal. It usually looks like a bowl of slime but this one looks nice! I love that this one has a cinnamon bun coming out of it. I'll take those and y'all can fight over the oatmeal. ;) And that first picture really looked like a cinnamon bun cookie! I think I need to try that. And your pumpkin cinnamon buns!
