 As look out onto the snow-covered streets, I am wishing to be transported straight ahead to Florida.

Fruity and tropical, this 4 Ingredient Raspberry Colada Smoothie is healthy, full of tart raspberries, coconut and protein for an island inspired breakfast or snack!

While I live in the middle of the midwest, I should be thankful I get to experience all four seasons. But to a girl that only likes to experience the snowflakes falling from the comfort of my home with my fuzzy socks, fire blazing and a warm cup of coffee in my hands.

I always have and always will take warmer days over those chilly ones. While I do enjoy cuddling up with my husband and chowing down on big bowls of comforting soup, I would like to tell Mother Nature, “Don’t let the door hit ya on your way out.”

With our trip to Florida a month or so away, I am ready to say see ya to winter and welcome spring with open arms. I have had my fill of soups, hot cocoa and hearty dishes and ready for all things light, refreshing and fruity!
Yes, I know I have the worst of winter is ahead of us, as KC is notorious for being destroyed in February. The silver lining this year? Watching my little guy discover snow for the first time! Maybe even experience snow ice cream? Has anyone made it before? If so, please spill!

Fruity and tropical, this 4 Ingredient Raspberry Colada Smoothie is healthy, full of tart raspberries, coconut and protein for an island inspired breakfast or snack!

To get in the Florida mood, I have made a Raspberry Colada Smoothie to help bring on those warmer days and help prepare me for our trip. It is no secret I am lover of all things coconut so naturally, I have a special place in my heart for pina colada’s! The fresh pineapple, the tropical coconut, and the rum is just a perk. In place of the pineapple, I swapped in tart raspberries which help make this smoothie not overly sweet. To keep it light and healthy, I swapped out coconut cream with almond milk. Feel free to swap your milk of choice, though. Coconut extract is added to bring on the full coconut flavor without weighing the drink down. And lastly, I love adding a scoop of vanilla protein powder to give the drink extra body and a healthy protein boost. This part is optional but highly recommended as it helps contribute to the drinks smooth consistency and the vanilla enhances the sweetness!  If you choose to not add it, vanilla greek yogurt would be another great option!

As the snow falls, I will gladly sip and dream of warmer days with my raspberry colada smoothie!

Ingredients

  • 1 cup unsweetened almond milk (or milk of choice)
  • 1 cup frozen raspberries
  • 1 tsp coconut extract
  • 1 scoop vanilla protein powder*

Instructions

  1. In a high power blender, add all the ingredients and blend until smooth.
  2. Serve immediately.

Notes

*Optional, but highly recommended as smoothie will be icy. If you choose not to use it, vanilla greek yogurt would be a great alternative! *This is the protein powder I buy and love! It blends extremely well and contains no artificial ingredients!

    Snow isn't my favorite, but I'll take the occasional Colorado snow over those awful Arizona summers any day! This raspberry colada smoothie is making me crave spring and like KC the worst cold weather usually shows up here in February and March. Oh well snow has yet to stop me from sitting inside and sipping smoothies!

    I am right there with you enjoying the snow from the inside with fuzzy socks and coffee!!! Did you get hit with tons of snow this weekend here in the midwest? We were supposed to, but it missed up by a lot! I am loving this fun smoothie...perfect for making me think I'm in the tropics!!!

    It's hot as all get out here and getting hotter... but I could totally still enjoy one of these smoothies in the morning to cool down and to envision myself on a beach. While Dallas is nowhere close to the sand that I want to be lounging on, I'll transport myself elsewhere through a beachy breakfast!

      Hi Cyndy! It is just flaked coconut! I did that more for the photos but you can dip it in a bit of honey or water (not sure if that will stick though) and then in coconut flakes. Enjoy!

    I live in the city so snow ice cream is definitely off limits because there are far too few grassy patches and far too many doggies...if you know what I mean. But one thing I definitely could snuggle up to is this beautiful smoothie. The Mr. has been doing a lot of traveling and smoothies are my go to lunch because they provide me with the dose of protein I need plus are easy to make and easy to clean-up. I usually add a tablespoon of almond butter for a little extra fat & fiber. I also add vanilla or almond extract. . .but definitely going to need to give coconut extract a try next time so that I can pretend I'm sitting in a hammock in an exotic location while the rest of the city shivers right on past my place.
