Last December I went on my first holiday lights tour. A big group of my friends all got dolled up, loaded up onto a bus and drove around town to see all the gorgeous holiday lights.

Yes, there was Griswold houses included! And oh the best part?

The spiked slow cooker hot chocolate.

That was the start of my love affair with homemade hot chocolate. Now don’t think I have never had a good cup of hot chocolate. Actually I was quite addicted to it years ago. Don’t worry I have received the help I needed. Kidding!

I can never get over my love of salted caramel hot chocolate!
It all started during my barista days in college while working at Starbucks. They make this killer, super rich salted caramel hot chocolate. But needless to say, it is sort of a calorie bomb and I can’t justify in sipping on one each day. I knew when I went home I had to recreate one. All my other Starbucks recreations, like this cold brew and coconut mocha macchiato have been a hit around here and this one is no different!

Once difference is I made it super easy to make. No fancy mixes, no frothers needed. Just a few ingredients and a slow cooker. Or stove top! I have tested with both and so happy I did. I was able to indulge twice!

The base starts with coconut milk, cocoa powder, coconut sugar and vanilla extract. Which is the basic starter for a killer homemade hot chocolate mix. But we don’t stop there. I used my healthy salted caramel sauce to recreate my Starbucks love. And I couldn’t be happier I did! After we add all the ingredients to the slow cooker, let it cook for a couple of hours then when you return, you are rewarded with a rich, creamy and salty, sweet cup of melted chocolate! Pure bliss.

  2. this reheats wonderfully so feel free to make up ahead of time, store in a sealed container, once cooled, then reheat as needed.

Ingredients

  • 4 cans lite coconut milk
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 2 tablespoons pure vanilla extract
  • Optional Toppings: Salted Caramel, Marshmallows, Chocolate Chips, Whipped Cream

Instructions

    Slow cooker:
  1. Add all ingredients, except toppings, to a slow cooker. Set to low for 3-4 hours. Stir occasionally, and let cook until heated through.
  2. Serve with optional toppings.
  3. Stove Top:
  4. Add all ingredients to a large sauce pan, set to medium heat. Whisk until all combined and cook until warmed through. Serve immediately with optional toppings.

    Oh WOW. I was in love with this at the first line, never mind all the way through. I'm staying with my folks over Christmas this year and I might just dig out my mum's slow cooker and sneak a batch of this on on Christmas eve <3 Save-A-Lot sounds well useful too, wish there was one for me in the UK!

    This looks so good and I'm a sucker for chocolate and salted caramel! I need to make this and snuggle up with a mug of it! I mjight have to make a batch this weekend to bring with when we go cut down our tree. Since it's s slow cooker recipe I can cook it in there while we go pick him up from the airport and grab it on our way back through since we can't go to the farm we planned on. Might need to tweak it making it a mocha for us by adding a couple shots of espresso. ;)

    I am looking for a nonalcoholic chocolate martini. They are so good, but it's like drinking chocolate milk. I can handle 1 or 2 with alcohol, but no more than that.

    There are two family recipes that I make every year: the first is called "Italian Roses" or Pitcannusa! My mother, sisters, &I make this together. It uses 10 # of flour! The other is Panettone, which I make as gifts! Thanks for the giveaway!

    Sweet potato pie is always high on my list. I also like making sugar cookie cut-outs. Decorating those has become as much of a tradition for our kids as decorating Easter eggs or carving pumpkins.

    I was really excited to make my Sticky Toffee Pudding studded with nuggets of candied ginger and chopped dates covered in a luscious warm toffee sauce, but now, after seeing the recipe for your salted caramel hot chocolate, I am unsure which I am most excited to make.     Now that is one healthy but indulgent hot chocolate! Looks way better than the ovaltine my mom always gave me haha. I'm still a little in disbelief that it's almost Christmas... but I'm most looking forward to making some ginger snaps for my boyfriend.     I love making my healthy side dishes for the holidays for the family (bacon and Brussel sprouts, roasted smokey sweet potatoes, etc...) and always surprising them that something can be healthy and delicious! Been looking for just the right hot cocoa recipe to make for my kiddos in this cold weather.... can't wait to make this!

    I am most excited to make beef tenderloin for the holidays.I know as far as holiday dishes go it is not exciting but we only have it once a year and there really is an art to roasting it to perfection. I also always make a very spicy horseradish dip on the side.

    Can I use raw cacao in this? also, would peppermint or regular marshmallows do well with this recipe?

      I just use cacao powder! And marshmallows would be delicious but I don't think the peppermint would mix well with the salted caramel. Enjoy!
