On other notes, Happy {almost} Thanksgiving! This week starts my most favorite time of the year. There is a special joy in the air, well, mostly. Unless you are finding yourself shopping on Christmas Eve for your presents. HOW in the world do people wait until the last minute to buy all their presents. It gives me anxiety just thinking of it. Whoa.

I am more excited this year for the holidays because last year I was Mrs. Captian Space Cadet. I blame a little human being named Aiden for that. Heck, he was only 3 weeks old on Thanksgiving last year. And it was sorta a nightmare. He started showing big signs of acid reflux and the poor little guy was just miserable. He was tired. We were extremely tired. It was just rough.

BUT. But this year shall be different! Aiden will be 13 months old then, and he is full of spunk, life and never stops moving. I wish I was exaggerating but this little boy has a yearning to discover all life has to offer, all in one day.

He will wave at just about everyone we walk by. Heck, he even waves at the cars zooming by outside as we gaze out our front door in the afternoons. His dimples usually win everyone over before he flashes his four baby teeth. And his baby giggles have quickly become my favorite sound in the entire world. I love seeing his little wheels inside his head turn as he plays with his toys. All these joys in life, I knew people spoke about when having kids, but I really didn’t know the importance of them until I had one of my own. It fills my heart.

So this year, Thanksgiving will be extra special as we give thanks, with our family. I am truly the lucky one to be able to call him mine.

How about that pumpkin recipe? I have found oatmeal to be my regular breakfast since I started my allergy testing. Nearly all bread was nixed so I turned to the best overnight oats recipe I could think of. They were my saving grace since eggs are a no go for me. Sad, I know. Overnight oats in a jar are ideal for just about anyone: the time crunched, sleep deprived or heck even, leisurely morning goers.

To spruce up my mornings, I was forced to play with flavors. Sounds awful, right? Luckily, it is hard to screw them up. I started with my favorite blueberry cheesecake overnight oats. Then peanut butter overnight oats and then my vanilla latte overnight oats. I would simply make a batch, divide them between sealed containers and tuck them away in the fridge until we met again in the wee hours of the morning.

With fall flavors floating all around, pumpkin cheesecake overnight oats seemed to fit right in. I love that you can make these overnight oats vegan by swapping in coconut yogurt and dairy-free cream cheese, and if protein powder is not your thing, the yogurt and chia seeds will add plenty of protein!

What I really love about this cheesecake inspired overnight oats, is the fact that I can almost fool myself I am eating dessert, but for breakfast! I know it’s not completely believable…but heck, for a girl that really loves her sweets, it will do!

meal prep tips:

  1. These overnight oats are ideal to make a double batch of, then store in sealed containers in the fridge for the week! So add to your meal prep days, and you will have breakfast all week long.

  2. they will hold in the fridge for 5 days, so have no fear to make a big batch.

  3. for the almonds/pecans, place in individual bags so you can grab and go when it’s breakfast time.

Ingredients

  • 1 cup old fashioned oats
  • 1 scoop Vanilla Protein Powder*
  • 2 tablespoons chia seeds
  • 1/2 cup unsweetened vanilla almond milk (or milk of choice)
  • 1/2 cup fat free vanilla greek yogurt*
  • 1/2 cup pumpkin puree (not filling)
  • Stevia, Maple Syrup, Honey or Sugar, if desired
  • 1/4 cup light cream cheese*
  • 1/4 tsp vanilla extract
  • 1 tablespoons maple syrup
  • Garnish, chopped almonds or pecans, if desired

Instructions

  1. Combine oats, protein powder, chia seeds, milk, yogurt. and pumpkin puree. Divide between two mason jars. Feel free to add in sweetener here, if using.
  2. In a small bowl, combine cream cheese, vanilla extract and maple syrup. Stir until fully combined and smooth.
  3. Top oat mixture with cream cheese mixture.
  4. Seal mason jars with lid, then set in fridge to let sit overnight.
  5. In the morning, garnish with chopped nuts and devour!

Notes

*To make dairy free, use vegan/dairy free protein powder, coconut yogurt and cream cheese. *This is the protein powder I buy and love! It blends extremely well and contains no artificial ingredients!

    Okay, so I JUST pinned this and had to pop on over to get a closer look. Talk about a powerhouse breakfast. I haven't made soaked oats before, but will credit your recipe with finally convincing me to take the leap :). We're dairy free, so I will simply sub out the dairy with some of my coconut milk yogurt. Lovely recipes. Lovely site!

    Yum, yum, yum! I'm a sucker for all things pumpkin, and these oats sound like a DELICIOUS to start the day. Also, I'm glad you're less of a zombie this Thanksgiving. ;) My daughter was born last March, and I still felt like I was not running at 100% at Thanksgiving.     Ahh, I miss those baby stages. It was definitely a lot of work, but somehow it seemed calmer. Now my kids are 8.5 and two almost 5 year olds and everything is always chaotic, especially during the holidays. I wouldn't change it for the world though. :) And there is never too much pumpkin. In fact, I always have cans stocked in my pantry all year long. This looks like the perfect breakfast!
