It has occurred to me, that now I have a little one, starting Christmas traditions have really become high on my priority. But let me say, my list of traditions isn’t too long yet.
Let me back up first. This year will be the first year that my family isn’t celebrating Christmas Eve at my Nana’s house. It is a bittersweet thought. Do you remember back in September, when I mentioned that my Nana had found another love and remarried? Isn’t that sweet?! But that comes with changes, as most marriages do. A couple of weeks ago, she sold her house that I have grown up in. The house where I spent afternoons making her famous sugar cookies and walking on her counters looking for graham crackers to dip into icing. The house that holds the door with hundreds of markings, of all my cousin’s heights over the past 30 years. While I couldn’t be happier that my Nana has found someone to spend her days with, there is part of me that is sad to see part of my childhood go.
Despite the sadness that comes with selling a house, there is excitement as my family starts a new tradition on Christmas Eve. We have decided to make that evening about my parents, brother, his wife, their girls and the three of us. A fun evening of flavorful appetizers, a big feast and a few cocktails to help fuel our unwrapping. I have no doubt this Christmas Eve will become a new favorite tradition of ours. How can it not be as I will be spending it with the people that mean the most to me?
Beyond, holiday traditions, I am dying to start traditions for our little family and our little man! Ralphie, our elf on the shelf became a member of our family this year! Aiden says hello to Ralphie every morning. It’s too sweet. But we have yet to making holiday cookies, Aiden doesn’t quite have the attention span for that yet…bummer, right? But I am proud to say his first encounter with Santa went pleasantly well. A few lip quivers but those ended in smiles as he looked at that jolly ol man!

When brainstorming holiday cookie ideas, I had to go with something I knew. Something I was comfortable with. Hello no bake cookies. The base is whipped together in a high powered blender, or you could use a food processor, but I suggest a high powered tool to break downt the dates. They are what hold the base together, plus provide the sweetness. So yes, these cookies are only sweetened with natural sugars meaning a second cookie is not out of the question. It is the holidays anyways!
While the base of these cookies are pretty darn tasty, the filling is where it’s at. A fudge-like filling that is smooth, luscious and filled with chocolate flavor. At tastes pretty darn good straight off the spoon…
I am already planning on making my third batch in one week to share with all my loved ones this weekend! Now these no bake fudge cookies are a holiday tradition I can get behind!

Yields 12 Cookies
Ingredients
- 3/4 cup old fashioned oats (gluten free if needed)
- 1/2 cups pitted Medjool dates (80 grams)
- 2 tablespoons unsweetened applesauce
- 1 teaspoons vanilla extract
- 1 tablespoon cocoa powder
- ¾ teaspoon kosher salt
- 1/4 cup Coconut Oil
- 1/4 cup maple syrup
- 1/4 cup Cocoa Powder or Hot Cocoa Mix
- White Chocolate Pieces
- Crushed Peppermint Pieces
- Marshmallows
Instructions
- In a high-powered blender, add the oatmeal, dates, applesauce, vanilla, cinnamon, cocoa powder and salt. Process until the dates start to break down and the mixture starts to come together, like a stiff dough.
- Onto a parchment lined baking sheet, divide the dough into 12 balls. Press down with either the palm of your hand or the bottom of a flat glass, to create a flat cookie. You may want to lightly wet your hand or glass to prevent dough from sticking.
- Using your thumb, create an indention in each cookie. Place in freezer to harden while making filling.
- In a microwave safe bowl, melt the coconut oil in 30 second intervals in the microwave. Add the maple syrup and cocoa powder or hot cocoa mix. Mix until smooth.
- Using a spoon, divide the mixture between the 12 cookies. Sprinkle with optional garnishes.
- Serve immediately or place in fridge to store.
Notes
Cookies are best refrigerated as they soften at room temperature.
