When I was little, french toast reigned supreme.

It was thee breakfast of choice on Saturday mornings and the one breakfast I know my Mom and I will still swoon over whenever we head out to brunch.

When I was little, I was positive her french toast was the cream of the crop. And let me add, it still is. While she may not spruce it up with any secret ingredients, although I was determined she did because it was just that good. Rather simple recipe really. Milk, an egg, dash of cinnamon and a good pour of vanilla. ( <- I believe everything is better with a heavy hand of vanilla extract! Fact as in these pancakes.)

It wasn’t until college that my roommates were shocked at my french toast making skills. Say what, you add what to yours? Cinnamon? Vanilla? Say what?

Um doesn’t everyone spruce theirs up? You mean you enjoy just milk soaked bread? I’ll pass.

They were amazed that with just a few extra flavorings, the french toast was taken to a whole new level. My mom may not claim to love cooking, but her food was full of love. And it showed in her french toast.

So fast forward to feeding my little family and I still have a heavy hand of vanilla extract but mostly I love elevating our french toast with simple swaps. Dark Hot Chocolate French Toast is a prime example. Buttery, fluffy challah bread is soaked in a bath of hot chocolate spiked milk. International Delight’s Dark Hot Chocolate has made enjoying a warm cup of hot chocolate much easier. No mixes needed and a bonus? It tastes pretty darn good chilled or piping hot with mini marshmallows floating around. I’ll take that any day!

The milk mixture is a made up of International Delight Dark Hot Chocolate, a bit of your favorite hot chocolate mix, cinnamon and you guessed it, a good pour of vanilla. The buttery challah bread soaks up the chocolate milk and fills each nook and cranny then is seared to a golden brown.

During the last minute of cooking, add a few marshmallows to warm up and you will have one ooey, gooey, chocolate filled breakfast that is just too good to save for the weekends!

Ingredients

    French Toast:
  • 4 slices of Challah bread, about 1 inch thick
  • 2 eggs
  • 1 cup International Delight Dark Hot Chocolate or Chocolate Milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup (or 1 packet) your favorite hot chocolate mix
  • To serve:
  • Powdered Sugar
  • Maple Syrup
  • Marshmallows

Instructions

  1. Whisk the eggs, hot chocolate, cinnamon, vanilla extract and hot chocolate mix together in a wide shallow bowl.
  2. Heat a large non-stick pan over a medium heat.
  3. Dip one slice of bread into the mik mixture, coating each side and making sure the bread soaks up some of the milk.
  4. Let the excess mixture drip from the bread and then onto the preheat pan.
  5. Cook over a medium heat for about 3 to 4 minutes until it's golden brown then flip and repeat.
  6. Remove from pan and serve dusted with powder sugar, maple syrup and marshmallows.
  7. Once the toast is done transfer to the warm tray in the oven and repeat with the rest of the brioche.
  8. Serve the french toast dusted with powdered sugar and drizzled with maple syrup.

    These photos are gorgeous!! And you're right--everything is better with a heavy hand of vanilla. I tend to use 1/4 tsp, but the other day I didn't measure when making a recipe and probably ended up using close to 1 tsp and loved it! Note to self: always use a little more vanilla.

    I totally agree with you on the vanilla. I routinely double the vanilla in most recipes, and have taken to using double-strength vanilla extract in most baking. Your French toast looks fantastic!

      Hi Tammie, yup! You can even make a cup of hot chocolate. And no need to heat it up! Just mix the water with the mix. Enjoy!
