Eight weeks ago, our little man changed our world. 8 weeks?! What? How? Where did my little peanut go that could barely fit into this newborn sleepers? Where his little toes could barely make it into the footies? And now he looks more like a fat man in a litte coat.
Poor peanut.
Despite my teary eyes as I pack away his newborn attire, I am gushing over his new outfits that make him look more like a young gent than our little guy. Take his Christmas outfit for example. Little cordoroy’s with a button cable knit sweater and an oxford button up onsie. Dying.
Let’s all just hope he doesn’t spit up on it. I will start the pep talks now.
And can I mention those little dimples he flashes first thing in the morning? This mama is going to be in trouble…
Despite my teary eyes these days, I can’t help but get anxious for Christmas. OMG. As in next week! How is your shopping going? I really, really tried to be done sooner than later but now its like 9 days out and I am still running around like a chicken with it’s head cut off. Well maybe a slow trotting chicken as I have a little guy attached to my hip.
But with my preoccupied time, a girls still gotta indulge during those holiday parties! And we all know I love making a dinner out of appetizers. And these Cranberry, Brown Sugar Brie Bites fill every box I am looking for in an easy holiday appetizer. Quick, a few ingredients and they have three different flavor profiles. Sweet, savory and crunchy.
Brie and cranberries are nostaliga during the holidays. Brie is creamy, slightly sweet and melts like a dream. To finish, sprinkle a bit of brown sugar and top with tart, dried cranberries. Besides the flavors, I can’t get over how quick they come together. As in under 20 minutes, making these the party appetizer of the season!

Yields 12
Ingredients
- 1 package mini phyllo cups
- 1/2 cup diced brie
- 1/4 cup Truvia Brown Sugar Blend
- 1/2 cup dried cranberries
Instructions
- Preheat oven to 350 degrees F.
- Put mini phyllo cups into a mini muffin tin.
- Divide brie between each cup.
- Sprinkle with brown sugar and top with dried cranberries.
- Place in preheated oven and bake for 10 minutes, or until brie is melted and phyllo cups are slightly golden brown.
- Serve immediately.

*These can be prepared ahead of time, kept covered in the fridge until ready to bake.
