A sweet and spicy take on the classic! BBQ Chicken Sweet Potato Nachos combine two favorites! With gooey cheddar on top, this meal comes together quickly!
Some say it’s the best time of the year.
I beg to differ. I believe Christmas trumps March Madness. But my husband would love to put up a good fight!
It’s the time of the year that mens attention spans becomes shorter and if you are hoping for a conversation during one of those basketball games during the big dance, you better talk quick during those commercials.
I know from personal experience. I might as well be talking to a wall if there is a ball in the air.
I don’t blame him though. He lives and breathes KU basketball and while I do love my Jayhawks, I am there more for a social gathering. Not much has changed since Super Bowl…
If there is gonna be a game on and a beer in my hand, you bet there is a good food close by. And what is a ball game without nachos?
No ordinary nachos though. A fusion of BBQ + Mexican. After having a love affair with Short Rib Nachos from a local bar, I knew I had to remake the BBQ spin on nachos at home. And stat, or we would be making our way to that bar weekly to get our fill.
The base is sweet potato chips which balance the savory chicken, BBQ sauce and corn. Layer on as many toppings as you want! The recipe is more of a guideline anyways. Go crazy.
Finish it off with a good handful of freshly grated cheese. Don’t skimp on this part! Preshredded cheese has a starch on it to prevent it from caking up on you. Whereas freshly grated is 100% cheese and will be 100% gooey goodness for you. So much more flavor for only a few moments of work!
After a short bake in the oven, top with your favorite BBQ sauce and a drizzle with greek yogurt (Sorry sour cream! You are not needed here!)
