Did you shower your father yesterday? Or your hubby, brother, daddy’s, etc? I spoiled my hubby all weekend as being his first Father’s Day, but maybe unofficial Father’s Day is more appropriate…but nonetheless, we are both excited to be able to celebrate these Hallmark holidays! Let’s be real…just another holiday like Valentine’s Day.

Don’t get me wrong. I love the idea of a dedicated day to show your unconditional love but I am also up for the random, surprise ways to show your love. Whether that is whipping up their favorite dinner, a surprise date night, or a unexpected massage. They are all wonderful and I would take them anytime of the year!

So with the summer heat upon us in the Midwest, I am having to turn to ways of curing my sweet tooth without having too much sugar before making myself sick. Seriously, the struggle!

One way I do that is with healthy cookie dough bites, skinny milkshakes or my latest spin on our favorite frozen dessert…skinny coconut cherry sorbet! I have seen this idea floating around pinterest for years and kicking myself it has taken me this long to give it a go. Seriously! It only has 4 ingredients and takes 5 minutes. Can you say easy peasy? (did I really just say that?)

I start with frozen cherries, but feel free to use whatever frozen fruit you love or have on hand.  Thinking strawberry lemon is next! Then add a bit of honey, plain greek yogurt and coconut extract to a high powdered blender then give it a whirl! Once smooth and silky, you are ready to dive in! Or store in an air tight container for later.

Because you know it won’t be long before you have your hand in the freezer wanting more!

Ingredients

  • 16 oz. frozen cherries
  • 1/2 cup plain non fat greek yogurt
  • 1/4 cup honey
  • 1 tsp coconut extract (more or less depending on how strong you want the coconut)

Instructions

  1. In a blender, add all the ingredients and puree until creamy.
  2. Serve immediately or place in a airtight container and store in the freezer.

    One of the greatest things about summer are plump juicy cherries. I have some black cherries in the freezer (it's the middle of winter here), so I think I might give this a go for dessert tonight using coconut cream. Yum.
