Man oh man. I don’t know about you, but I believe the only way to start and end your day, is with something sweet.

Whether my morning starts with peanut butter oatmeal or a toasted english muffin, there always and forever will be a cup of joe accompanying.

While I do love a classic up of coffee, I am sucker for iced coffee. Ultra creamy and sweet. And even if its snowing outside, don’t be surprised to see me pouring my cold brew over ice while watching the snow fall.

I am weird. I know.

My love of cold beverages falls right in line with my love of ice cream. Which is no secret. From ice cream cakes, to ultra creamy peppermint ice cream, I do not discriminate towards any frozen dessert.

With summer unofficially in full swing, what other dessert screams ‘bring on those summer days” than a good ol ice cream float? They immediately take me back to visits to my Grandma’s house. Filled with chocolate dipped potato chips, ice cream sandwiches and root beer floats. Made with IBC Root Beer. No other way.

This summer will be filled with floats. But no ordinary floats. Cherry Vanilla and Salted Caramel Affogatos. Fancy ice cream floats, if you will. Classically, affogatos is a coffee beverage; starting with a scoop of vanilla ice cream or galeto and topped with a shot of hot espresso. So much love in my eyes. First off galeto is heaven if you ask me. Ultra creamy and full of flavor. It’s made with less air so it’s denser than typical ice cream, making a smaller portion more satisfying. But I highly suggest a large scoop. That stuff is just that good.

Rather than hot espresso, I opted for International Delight Iced Vanilla Coffee. Love in a cup for me. Silky and full of caffeine. No need to whip up an iced coffee yourself, rather just pour over ice for a homemade iced latte.

Simply start with a bit of cherries, top with a heaping scoop of salted caramel galeto, layer on the Iced Vanilla Latte then top em off with cream soda. As the flavors melt together, there is sweetness, saltiness and creaminess. So many flavors, I couldn’t possibly pick just one to favor. Luckily, I don’t have to…I can just sip away!

Ingredients

  • 1 cup frozen sweet cherries
  • 2 large scoops salted caramel galeto
  • 1 cup International Delight Light Vanilla Iced Coffee
  • 1 cup (or more) diet cream soda

Instructions

  1. In a microwave safe bowl, microwave cherries for 30 seconds to 1 minute until cherries are thawed. Divide the cherries and their juice between two glasses.
  2. Add the ice cream to the two glasses.
  3. Pour half of the iced coffee over each cup.
  4. When ready to serve, top with cream soda slowly as it will bubble up.
  5. Enjoy immediately.

    I HAVE to end my day with something sweet. Sometimes I'll be like "man I had a huge dinner, I really should just eat some carrots for bedtime snack" But, then I eat chocolate. ORRRR these amazing bevvies! These are perfect for the warmer weather we're having! Pinned!
