I feel like summer just started, yet all I hear is how everyone is ranting about fall coming around the bend. I still have to savor BBQ with friends, Saturday afternoons at the ballpark with a bag of salty peanuts and ice cream to cool off with on a humid, KC day.
Even though I love fall (hello, my birthday!), I am not ready to break up with summer quite yet. We are just getting to the flirting stage!
Simple and stress free dinners are highly popular around our house when evening walks, bike rides or time spent with family and friends are also on the agenda. So back to the burgers….to cool things off, a simple coleslaw of greek yogurt, cream cheese and blue cheese is whipped together and slathered on to give your taste buds a run for their money.
I may or may not have been eating this coleslaw all on its on. You will never know.
It’s the stinky blue cheese I can’t say no to. With a hint of honey added, the coleslaw is borderline addicting…

I am eating avocado’s like they are going out of style; from with my eggs in the morning, smashed on toast with a sprinkle of feta, to on their own with a healthy dose of seasoned salt for the ideal afternoon snack. The creaminess of the avocado adds earthiness to the burger, along with freshness.
Oh not to mention, these burgers come together in a jiffy. With a quick toast on the buns, add some heat to the black bean burgers, and a quick twist of your wrist to finish up the coleslaw, you will have a killer burger in no time. Leaving you enough time to savor the last few days of summer!

Yields 4
Ingredients
- 4 whole wheat burger buns
- 4 MorningStar Farms Spicy Black Bean Burgers
- 2 cups pre-made coleslaw mix
- 4 Tbsp blue cheese crumbles
- 2 Tbsp plain greek yogurt
- 1 oz reduced fat cream cheese
- 1 Tbsp honey
- Pinch sea salt & pepper
- 1 small avocado, sliced thin
Instructions
- For the coleslaw, mix coleslaw, blue cheese, yogurt, cream cheese and honey in a small bowl. Mix well and season with salt and pepper. Set aside or refrigerate if making ahead of time.
- Cook black bean burgers according to package instructions (Grilling is my favorite!).
- Meanwhile, toast burger buns.
- Once burgers are cooked, layer on burger bun bottom, top with coleslaw and avocado.
