Did you ever have ‘friendly’ competitions when you were little?

Of course you did. You were a kid.

My cousins and I growing up were more like siblings. Loved each other, yet fought over the silliest things. We would venture down to the basement or upstairs play room and be lost for hour’s together playing games with ridiculous rules and themes. I can’t say that we lacked an imagination.

Like Mad Dog? Stuffed animals trapped on one side of the room, dying to be rescued but not to be captured by the mad dog in the middle. Entertained us for hours, I tell ya. And when we weren’t trying to rescue animals, we would dare each other to see who could finish the most chips and salsa, clear the table after everyone was done eating or just a friendly competition of a corn eating contest.

That 4th of July will always stand out in my mind. My brother and cousin set out to polish off the endless bucket of corn. With a lawn full of cheerleaders, they both ‘typewriter’ style ate ear after ear of corn to only end up rolling around in the grass from consuming too much of the butter soaked corn. While I can’t remember a clear winner (as my parents would say, they are both winners), that afternoon of friendly competition will always be remembered at every family get together that involves corn.

I can’t imagine the amount of corn that would be consumed if I were partaking in a contest that involved Garlic Parmesan Corn on the Cob. While I usually steam my corn, this summer I am opting to take it outside with the rest of dinner. Grilling steps up the flavor a few notches. The smoke and slight char that we all love from burgers comes out with each bite.

But I couldn’t stop there. A bit of olive oil is coated on before grilling then sprinkled with garlic salt and salty Parmesan before serving. Garlic and Parmesan are two little peas in a pod. One is slightly sweet. One is perfectly savory and when brought together, they balance each other out perfectly. Who says that burgers have to get all of the spotlight?

Ingredients

  • 4 ears of corn on the cobb
  • Olive oil
  • 1 1/2 tablespoons garlic salt
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Husk the corn. Brush it lightly with olive oil.
  2. Heat a grill on medium heat. When hot, place the corn in the pan. Rotate the corn every few minutes with tongs so that it browns and is cooked all over. If the corn is getting too dry, brush with more olive oil.
  3. Cook for 7-10 minutes, until the corn is tender and charred on all sides.
  4. Remove from heat, sprinkle with garlic salt and Parmesan.
  5. Serve immediately.

    I didn't grow up with a big group of cousins. But my sister and I each have four kiddos so they will get to have some great memories! The boys are all still little- but I can see eating contests in the future then they are teens! And I wouldn't blame them with a bucket of corn that looks like this- I might join in!

    Garlic and parmesan are so good on corn, but I haven't thrown it on straight off the grill before. That needs to change pretty soon cause that corn looks amazing!

    Oh I'm jealous. All my cousins were way older than us, by like 14 years so those memories were just with my brother - which is still fun but I only had one brother. :( Anywho, this corn sounds awesome! So need to try this at one of the backyard bbq's we have!

    Love simple comfort recipes like this. Will have to try Parmesan on my corn this Memorial Day. Haha I totally get you on the sibling rivalry. We used to always bribe and trick each other into doing the other's chores around the house. Who knew that I'd grow up to do all kinds of dishes as a food blogger.

    I can't remember ever having a corn on the cob-eating-contest, but we definitely used to do the typewriter thing ;) I love this fun and easy way to jazz up my corn! Definitely going to have to give it a try!
