I have decided every week, or just any day really, needs to start with chocolate. How can your day be bad if you do?
With spring in full swing, I am back on the smoothie train. Something about it being below freezing outside and downing a smoothie just doesn’t jive with me. It’s cold out, so let’s down something even chilly? Ya, no thanks.
But now that we have a little guy on the move, yes he has started crawling last week! And I can’t keep up. He is speed racer to snagging that toy in the corner or chasing his bouncy ball around the room. What does that mean to this mama? I am on the move a lot more too. Handheld sandwiches, peanut butter roll-ups and smoothies have become the standard lunch time snack. But no ordinary smoothies.
I prefer to chew my food rather than drink it. Just soothes the soul a bit more I find. That is where smoothie bowls come in. Bring on all the toppings! Copious amounts of toppings at that.
The amazing thing about smoothie bowls is they are a bit thicker than regular smoothies – meant to be eaten with a spoon and toppings galore. Almost as ice cream consistency! The banana base is mixed with a bit of vanilla greek yogurt to boost the nutritional factor up a bit. Feel free to use coconut or even plain yogurt if that’s what you prefer. We all just know my love of vanilla.
The best part about these smoothie bowls is the way I feel after feeding myself something nutritious and dessert like all in one scoop. Nothing like breakfast disguised as dessert. Simple ingredients make a big impact, as we have seen in this power kale salad and also this skillet zucchini lasagna! So when I start my morning, not much is different. Plus coffee. A few cups if you will. But no ordinary cups there either. I am a much more of a bit of coffee with my cream and sugar sorta gal. So when International Delight debuted their Simply Pure, I knew it would become a staple in our house. Only five ingredients, it’s offering a new way to enjoy my morning cup of joe.
Between the hazelnut, vanilla and caramel, I am dreaming of all the morning possibilities that will bring delight to my day!

Ingredients
- Smoothie:
- 3/4 cup unsweetened almond milk (or milk of choice)
- 1/2 cup nonfat vanilla greek yogurt
- 1 large frozen banana
- 3/4 teaspoon coconut extract (or to taste)
- 3/4 cup ice
- Toppings:
- 1-ounce dark chocolate pieces
- Toasted coconut flakes
- Strawberries, optional
- Granola, optional
- Chia Seeds, optional
Instructions
- In a blender, add the milk, yogurt, banana, extract, and ice. Blend until smoothie. Add to bowl.
- Sprinkle chocolate, coconut flakes and optional toppings you wish. Enjoy!
