As a full on guacamole-aholic, this is is thee first recipe to grace The HIT Files. What has taken me so long?

Part of it is, our go-to recipe is a classic. Nothing fancy. Nothing schmancy. So to add another guacamole recipe that everyone and their sister has already in their repertoire seemed unnecessary. Until I started to brainstorm for a cocktail party I had with some friends a bit back.

Avocados run through my veins. Every meal could include avocado in some fashion if they did not cost an arm and a leg most days. Something I am not quite ready to give over. So every few days, or just an extremely large bowl of guacamole to myself is what I settle with.

Let me tell you. Chile spiced pineapple is a very good idea. Sweet and spicy. All in the one bite. I can foresee many more meals incorporating this combo. Hope you don’t kill me for it. Or you can just love it along with me!

The sweet and spiciness that pairs with the creaminess of the avocado is rather addicting. As in, you better make a bigger batch because you are going to be all over this. It is rather simple to make, as most gaucamole recipes are. To make life easier, if you have time, prep the ingredients besides the avocado prior to when you actually make the guacamole. Such as, chop, season and cook the pineapple before, mix with the chopped red onion. Set aside or chill in the fridge until ready to serve. Then, cut the avocado in half, scoop out the flesh, add to a bowl with the seasonings and lightly smash together. If you like a chunkier guacamole, mash less.  Prefer a smooth guac? Mash away.  Then fold in the pineapple, cilantro and red onion. And you are ready to go!

With Cinco de Mayo coming around the corner, I couldn’t think of a better recipe to kick it off than with a twist on guacamole. On second thought, maybe a margarita. But you will have to sit on the edge of your seats for that one!

Ingredients

  • 1/2 cup diced pineapple
  • 1 teaspoon chile powder
  • 2 avocados
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 lime juiced
  • 2 tablespoons chopped cilantro
  • 1/4 cup red onion

Instructions

  1. Preheat a small skillet over medium high heat. Spray with non-stick spray.
  2. In a medium bowl, toss the diced pineapple with the chile powder. Add to the preheated skillet and sear for 3 – 5 minutes, or until slightly charred. Remove from skillet and set aside.
  3. In a medium bowl, add the avocados, cumin, garlic powder, salt, pepper, and lime juice. Mash until avocados are half broken down and some avocado chunks remain.
  4. Add the pineapple, cilantro, red onion and gently fold in.
  5. Serve immediately.
