Let’s say I am both. Fair enough, right?

I have always dreamed of working in the catering biz. The idea of putting my love into food and watching the smiles on everyone’s face as they dig in, just lights me up! But as I have learned over the years, that you don’t have to make every single dish from scratch. Thank you Ina Garten!

So the past weekend when I had a few friends over to enjoy the sunshine and have a few mocktails on our back patio, I turned to Farm Rich Smokehouse BBQ to amp up my homemade lettuce wraps! And did anyone question the dish? Nada.

When I wanted to take a classic pizza flavor – BBQ – and transform it into a healthier summer dish, I knew lettuce wraps were in order.  All the flavor of our go to pizza but in a low carb, and quick dish that is fancy enough to serve at a dinner party!

The base is Farm Rich’s Smokehouse Pulled Pork BBQ as it is authentic BBQ that has been slow cooked for hours then hand pulled. And no weird ingredients either, just simple, clean ingredients. Just from those thoughts, it sounds exactly how we make pulled pork in our house! But no long hours spent around our smoker. Rather our time is spent with friends. Exactly how it should be, if you ask me.

Since entertaining is a love of mine, I don’t want to spend all my time in the kitchen so these lettuce wraps are ideal for parties! Simply prep the ingredients ahead of time.  Dice the pineapple, cut up the red onion, chop the cilantro, slice up the jalapeno and tear apart some big ol lettuce leaves. Then place them all on a big serving platter, cover then place in the fridge until dinnertime. Then, when it’s ready to eat, heat up the pork, let everyone assemble their own wrap and devour!

Now isn’t that music to everyone’s ears!

Ingredients

    Lettuce Wraps:
  • 1 package Farm Rich Smokehouse Pulled Pork BBQ (or 2 cups cooked, chopped chicken)
  • 1/2 cup diced pineapple
  • 1/4 cup sliced jalapeños
  • 1/4 of a small red onion, thinly sliced
  • 8 large lettuce leaves (Bibb lettuce works great!)
  • Optional Garnishes:
  • Handful of Cilantro
  • Chopped Peanuts or Cashews

Instructions

  1. Prepare the pork according to packages instructions.
  2. To assemble, top a lettuce leaf with the pork, pineapple, jalapeños, red onion and garnish with cilantro and peanuts.

    TOTALLY loving how EASY this recipe is! I am usually a party-goer because I can't handle the stress and anxiety of throwing one myself. BUT, with easy and delish meals like this? I bet I could throw one down myself! We're HYOOGE pulled pork fans here, so I need to try this! Pinned!

    So I used to be the party thrower, but now that we live in Colorado I'm the party goer who insists on bringing at least one thing to eat. I absolutely love the lettuce wraps! All my favorite pizza flavors in a lighter low carb meal!

    I used to feel like I needed to make every dish from scratch but I finally have started mixing it up because Stella just doesn't allow for 100% homemade all the time. I LOVEEE these lettuce wraps. I feel like I can eat so many of them because they are low carb! Pinning the recipe for later! ;-)
