Whelp, another year in the books and another fabulous year to look forward to. The holidays are such an exciting time but I am ready to get back in my normal groove; early morning work outs and hearty dinner salads. Also starting anew. I don’t like to make ‘New Years Resolutions’ per se. I believe that if you truly want to change, start a new routine, enrich your life, then why wait till the new year? Start it at that moment. Over the past year I have been on a journey to find myself and overcome some personal difficulties; it has been a rough path but I am determined this is the year that I will honestly be able to say I love what God has given me. I am excited for the path ahead; even though it is more like a roller coaster than the yellow brick road, but when it is all said and done, I will look back at the hard times as they will have built me up to a stronger women.
Even though I just said I am not a “New Years Resolution’ sorta gal, I am trying to get back in the swing of meal planning, food prepping grab-n-go lunches and breakfasts, and having healthy snacks on hand, as I pretty much fell off the bandwagon the week before Thanksgiving. One meal that is sure to please (both taste buds and waist lines everywhere) are these Skinny Strawberries and Cream Chocolate Crepes! Since breakfast is the most important meal of the day, and my personal favorite, chocolate is mandatory.
These crepes are full of protein, have stick with you fiber from the nutty oatmeal and bursting with flavor from the fresh strawberries and dedicate cheesecake sauce! I lightened up these delicate crepes by using egg whites, oatmeal in place of flour and applesauce as a binder. I am such a sucker for strawberries and chocolate so what is better then fresh, juicy strawberries as the filling? The real cherry on top is the the ‘only seems sinful’ cheesecake sauce; Greek yogurt and reduced fat cream cheese compliment the maple syrup perfectly. Beware…you may want to drink this straight and forget the crepes all together. Don’t say I didn’t worn you.

Ingredients
- 1/4 cup oatmeal, ground into flour
- 1/3 cup liquid egg whites
- 2 Tbsp milk (dairy or non-dairy)
- 1 Tbsp unsweetened applesauce
- 1 tsp unsweetened cocoa powder
- 1/8 tsp baking powder
- Stevia or sweetener of choice, to taste
- Pinch salt
- 1 cup strawberries, sliced
- 2 Tbsp non fat greek yogurt
- 2 Tbsp reduced fat cream cheese
- 1 Tbsp maple syrup
- 1 tsp milk (dairy or non-dairy)
Instructions
- In a blender, combine oat flour, egg whites, milk, applesauce, cocoa powder, baking powder, stevia and salt. Blend until smooth.
- Preheat a small sauté pan over medium heat and grease with non-stick spray. Once heated, pour a little less than 1/4 cup batter into pan. Swirl around pan to ensure crepe is evenly distributed. Let cook still set; small bubbles will appear in center to let you know it's set. Using a spatula, flip carefully. Let cook additional 30 seconds to finish cooking. Move crepe to small plate. Repeat with remaining batter. You should get 4 crepes.
- In a blender, add cream cheese, greek yogurt, maple and almond milk. Puree till smooth.
- To assemble, evenly distribute strawberries between the four crepes. Fold then drizzle with cheesecake sauce.
