The classic breakfast for dinner that saves my husband and I a few times a week. Plus who wouldn’t want to have cake for dinner?

All the flavors of a loaded baked potatoes but lightened up with sweet potatoes, turkey bacon and buttery gouda then rolled into crispy quinoa for a major crunch!  These Quinoa Encrusted Loaded Sweet Potato Bites will be the hit during any tailgate!

The variety of options is enough to float anyone’s boat; from sweet to savory, to light and nutritious, to hearty and downright delicious.

A brinner we have enjoyed lately has come about from trying out Simply Potatoes for the first time. And needless to say I am hooked. Fresh, never frozen potatoes are already prepared and awaiting your arrival at your local supermarkets refrigerated dairy section.

I first gravitated towards the Mashed Sweet Potatoes; how perfect as sweet potatoes are consumed in our house like they are going out of style. So to help save dishes, I snagged them up as they are made with real ingredients, such as butter, a touch of brown sugar and cinnamon. All the usual suspects that go into my tators already.

That afternoon, while watching football with some friends, I wanted a recipe that I didn’t have to spend all afternoon in the kitchen, rather I could chat with them. So after a bit of brainstorming, I cooked some quinoa up, chopped crispy bacon, shredded a block of buttery gouda and I was ready to go.

After combining the potatoes with the few ingredients, they were made into large bite size balls, and then rolled through the quinoa. While baking, the quinoa crisps up, the mashed potatoes heat through, the Gouda melts and with one bite you are taken to utter bliss.

We couldn’t stop eating them; a perfect weeknight dinner, snacks during Sunday Football or a satisfying brunch to serve along the side of eggs for guests that may have worn out their welcome.

With simple ingredients, brinner just keeps calling our name!

Ingredients

  • 1 pkg Simply Potatoes Mashed Sweet Potatoes
  • 4 pieces cooked turkey bacon, chopped
  • 4 oz gouda, shredded
  • 1/4 cup chopped green onions
  • 1 egg
  • 1/2 tsp garlic powder
  • 1 cup quinoa, uncooked
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Cook quinoa according to package.
  2. Preheat oven to 415 degrees F.
  3. When quinoa is done, add garlic powder, salt and pepper and mix in well.
  4. Spread out evenly onto parchment or silicon baking mat. Bake for 20 minutes, or until quinoa is golden brown and crispy.
  5. Meanwhile, mix sweet potatoes (cold), bacon, gouda, green onions, and egg. Mix well. Roll into 10 balls or 20 smaller balls for appetizer size bites.
  6. Roll balls into the quinoa, making to cover all surfaces.
  7. Bake at 415 degrees for 15-18 minutes, or until heated through. Serve immediately.
