Honey Chipotle Slow Cooker Meatballs

Honey Chipotle Slow Cooker Meatballs are the absolute perfect party prep appetizer! A naturally sweetened sauce is whipped together and thrown into a slow cooker to create a luscious sauce that coats every inch of the chicken meatballs!

There is something about throwing a party that I thoroughly enjoy. Some may call me crazy but it’s my love language. Setting out endless and tempting treats, along with creating a festive cocktail as a sipper is hard to turn down. As the one that creates it all and sees the pleasure on peoples’ faces, it is one of the reasons why I landed here, writing this blog!

Growing up, cooking wasn’t really a spectator sport in our house. More of an ‘ends to the mean.’ We always ate well and I recall many dishes that my Mom made and still love to this day. Such as her white chicken chili that is uber creamy. But my favorite has to be her chicken parmesan. A shortcut version if you will. Because if you ask me, while I love chicken parm, it is a labor of love. She took prebreaded chicken breasts, smothered them in pasta sauce and a thick layer of mozzarella cheese. Baked to gooey perfection. To this day, I can taste each and every flavor.

Memories of food don’t always have to include long recipes or even completely from scratch recipes. More of creating any memory with a loved one that you can hold close to your heart. Even frequenting a local restaurant every Saturday night, like we did while growing up eating at Talk of the Town, a bar and grill with trains zooming throughout and (if we were good) a dump truck sundae to complete our meal. It was the one night my brother and I always looked forward to!

While I hope Aiden has many memories to look back on when he is older, I also hope he knows how much I loved making him homemade dishes!

With the big football game l on the horizon, this only means one thing to me. Party food! We usually have a laid back night, but finger foods are a must. To be honest, I think of the perfect menu for weeks beforehand. No judgment! But aren’t meatballs and nachos on the top of everyone’s list?

I am excited to announce I am partnering with Gold’n Plump again this year! It is our choice for their all-natural chicken raised on family farms. They don’t take any shortcuts so their products contain no artificial ingredients, preservatives or added hormones.

Gold’n Plump just released a line of chicken meatballs, which is music to my ears after falling in love with meatballs when I was pregnant with Aiden! And the best part? They are completely natural, made with chicken raised with No Antibiotics—Ever and contain no eggs. As someone with an egg allergy, buying store bought meatballs is out of the question. No longer my friends!

They offer two varieties: Homestyle, which I used here, and Pesto Italian. Being that the meatballs come fully cooked, they are ideal for quick dinner ideas, snacking and game day eats!

With our love of sweet and spicy flavors together, I knew honey chipotle slow cooker meatballs would be a winner! There is minimal prep so the stress of these meatballs is zero.

Simply whisk together some delicious flavors: honey, chipotle in adobo, chili powder, cumin, plus a few other goodies and pour them over the meatballs. Then let your slow cooker do all the work while you take all the credit!

meal prep tips:

  1. slow cooker meatballs were made for meal prep and make ahead events! Throw them in a few hours before party time, then switch the heat setting to warm so they are still nice and toasty for your guests!

  2. these honey chipotle slow cooker meatballs taste great reheated! Whip up a batch, then enjoy for lunch the next day either on a sanwich or over rice!

I think the meat lovers in my family would love this! I love the all the flavor and how these aren't your typical bbq meatballs. As my husband also likes to bring them to work for a quick potluck I forwarded this to him as well.

"Memories of food don’t always have to include long recipes or even completely from scratch recipes." ---I LOVE this! I try to make my family homemade dishes but some of their favorites involve store-bought ingredients, like these meatballs do...and that is OK!
