Honey Chipotle Slow Cooker Meatballs are the absolute perfect party prep appetizer! A naturally sweetened sauce is whipped together and thrown into a slow cooker to create a luscious sauce that coats every inch of the chicken meatballs!
There is something about throwing a party that I thoroughly enjoy. Some may call me crazy but it’s my love language. Setting out endless and tempting treats, along with creating a festive cocktail as a sipper is hard to turn down. As the one that creates it all and sees the pleasure on peoples’ faces, it is one of the reasons why I landed here, writing this blog!
Growing up, cooking wasn’t really a spectator sport in our house. More of an ‘ends to the mean.’ We always ate well and I recall many dishes that my Mom made and still love to this day. Such as her white chicken chili that is uber creamy. But my favorite has to be her chicken parmesan. A shortcut version if you will. Because if you ask me, while I love chicken parm, it is a labor of love. She took prebreaded chicken breasts, smothered them in pasta sauce and a thick layer of mozzarella cheese. Baked to gooey perfection. To this day, I can taste each and every flavor.
Memories of food don’t always have to include long recipes or even completely from scratch recipes. More of creating any memory with a loved one that you can hold close to your heart. Even frequenting a local restaurant every Saturday night, like we did while growing up eating at Talk of the Town, a bar and grill with trains zooming throughout and (if we were good) a dump truck sundae to complete our meal. It was the one night my brother and I always looked forward to!
While I hope Aiden has many memories to look back on when he is older, I also hope he knows how much I loved making him homemade dishes!

Simply whisk together some delicious flavors: honey, chipotle in adobo, chili powder, cumin, plus a few other goodies and pour them over the meatballs. Then let your slow cooker do all the work while you take all the credit!

Ingredients
- 1 package (18 ounces) Gold'n Plump Chicken Meatballs, Homestyle Flavor
- 1 cup chicken broth
- 3 tablespoons honey
- 1 1/2 teaspoons chili powder
- 2 teaspoons chipotle in adobo sauce
- 1 tablespoon ground cumin
- 1 1/2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon water
- 1 tablespoon cornstarch
- Sliced Green Onions
Instructions
- Add the meatballs to a 2-3 quart slow cooker.
- In a small bowl, combine the sauce ingredients. Whisk together until combined. Pour over meatballs.
- Turn on slow cooker to high and cook for 2 hours 30 minutes.
- When there is 30 minutes remaining, whisk the slurry ingredients: water and cornstarch. Pour over meatballs and stir. This will thicken the sauce.
- Once finished cooking, turn slow cooker to warm, garnish with green onions, if desired and serve immediately.
