Where do I even start?!

Although I don’t follow the Paleo diet all the time, I love the concept and the recipe creations we have created in our kitchen that are paleo. Such as my favorite shrimp salad and my spin on grilled chicken and bacon mac and cheese!
For this cookbook, I was thinking along the lines of bacon…because what Paleo diet is complete without bacon? And with summer cookouts coming around the corner, I knew chicken wings would be a hit. Throw them together and you have one smoky, savory, sweet and crunchy wing! I started off with making a savory jam with bacon and onions; caramelized onions tossed with balsamic vinegar, crispy bacon, cider vinegar and a touch of maple to add a touch of sweetness. The wings are patted dry before seasoning and baking to ensure an extra crispy skin; tossed in the jam and then into the oven they go. After the wings bake for a bit, they get a second bath in the jam and then put under the broiler to heat through!
