It’s Saturday and I feel like throwing more ice cream in your face.

Don’t worry I haven’t lost my mind. It’s Saturday and I am popping in to say “heyyyy!” But I feel like you need this ice cream in your life!

Yes it is the fall and everyone is all like “hail all pumpkin!” but I am over here like “Gimme that spoon! I am digging into that ice cream!”  But I am enjoying the best of both worlds, fall flavors and ice cream. Winning.

And I felt like celebrating today. I am experienced my first blogging conference yesterday – Chopped Con!  Luckily it was here in KC, but I was thrilled to meet some friends that I have been talking to for the past year, yet without every meeting them! Blogging has brought on a whole new term of friendships to me – we all get it. We are each other’s biggest cheerleaders with the same interests. And it is totally acceptable to spend hours talking about food. My hubby starts to roll his eyes after our fifth conversation in one evening wondering if french ties and chocolate should get together. But have no fear, my internet friends get it.

My blogging idols, such as Ali from Gimme Some Oven, Dana and John from Minimalist Baker and Lindsay and Bjork from Pinch of Yum all made an appearance and I was able to mingle and exchange a few words with them all. Secretly attempting to pick their brains to learn some new tricks. I was blown away with how approachable and open they were. Such a treat to learn they are just as friendly, if not more, than they are on their blog.

Beyond meeting my idols, I met those amazing friends I mentioned earlier. Becky from The Cookie Rookie (one of my first blogging friends and she has been such a great inspiration and cheerleader!), Krista from Joyful Healthy Eats, and Christina from Dessert for Two just to name a few!

It was like Christmas morning to me. So how else should I celebrate than with ice cream?

So with all the excitement around my first conference and the weekend, I am just gonna give you ten reasons why you need you get your booty in the kitchen and makes this ASAP.

1 ) Ice cream.  There is really no reason to eat it except for pure pleasure.

2) It takes only 20 minutes to make (if you don’t chill it) until you can stuff your face.

3) Brown butter. No explanation.

4) Salted Honey Caramel. I can eat this stuff with a spoon, sans the ice cream.

5) There is fruit so it essentially healthy for you and can be considered breakfast.

6) It is dairy free so no cows were harmed in the making of this ice cream.

7) Its Saturday. Every Saturday isn’t complete until dessert.

8) Dessert makes everyone happy. Scoops for everyone!

9) A chilly dessert requires a warm cup of hot cocoa. Bonus points if its spiked with Baileys and/or Kahlua. No judging here.

10) It’s stretchy pants season, so add another scoop on there.

Ingredients

  • 1 cup coconut milk
  • 1/3 cup coconut sugar
  • 1 tsp cinnamon
  • 1 apple, thinly sliced
  • 1 Tbsp butter
  • Caramel:
  • 1/4 cup honey
  • 4 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp sea salt

Instructions

  1. In a small sauce pan over medium high heat, add the honey until it starts to bubble. Cook 1 minute.
  2. Remove the stove top and add in butter. Whisk into the honey until it is incorporated. Then add the vanillin and sea salt. Set aside and let cool while you make the ice cream.
  3. In a blender, add blend the coconut milk, coconut sugar and cinnamon.
  4. Add to ice cream maker and process according to manufactures instructions.
  5. Meanwhile, add butter to a small sauce pan over medium heat and melt. Cook butter until it starts to bubble, brown and smells nutty. Add apple and stir around to coat apple completely with butter. Cook until apple is soft, around 5 minutes. Remove from heat and allow to chill.
  6. In the last few minutes of ice cream churning, add in the apples and drizzle in half of the caramel.
  7. Serve immediately for a soft serve type of ice cream or freeze for 2 hours to harden.
  8. To serve, drizzle additional caramel over top!

    i really wanted to go to the chopped conference - such great speakers! i'd love to hear what was the best thing you took away from it. and we both have ice cream on the brain! this looks like it would be perfect instead of pumpkin pie for thanksgiving.

      Oh wish you could have come! The speakers were amazing and I think my favorite part was honestly, meeting everyone! Networking is so powerful. But also, the best thing I came away with was the every day hustle. No success comes without the blood, sweat and tears. And I agree! Apple Cinnamon ice cream rather than pumpkin pie every day! Thanks Amanda!
