Just like in those Staples commercials? Exactly. The big red, shiny ‘Easy’ button. Well sorry to burst your bubble but that ain’t gonna happen. Wah Wah….
Despite that, I wish repeatedly for one as it seems like my life has been in fast forward lately with too many events to count going on. From taking our engagement photos this past weekend, to hashing out not so small details for the wedding, to family and friend time, and my crazy work load as month end approaches but I am grateful that I have all those events to keep me busy!
That is why this recipe is perfect. Perfect for those days that the last thing I want to do is think about making dinner. Shocker I know, right? With its Italian flare, this saute is almost embarrassingly easy. Like embarrassinly easy that I debated whether to consider this a recipe…but secretly, it is probably one of my top 5 meals as it screams comfort with its intense flavors. The beauty of this dish is you can customize it by adding whatever veggies suit your fancy. My go to’s? Diced onions, mushrooms, spinach and garlic that caramelizes when sauteed for just the right amount of time. After the veggies are done cooking, ground turkey is added along with Italian seasoning and then finished off with tomato sauce that marries the entire dish. I typically choose to serve this over roasted acorn squash or my ever so favorite Spaghetti Squash. But if you are a carb lover, this is insanely delicious over whole wheat pasta. I won’t be jealous or anything.
And what makes this dish so easy? Its a one potter. Yup…one pot! If you really want to make this even easier and be lazy, you can eat it straight from the pan to truly cut down on dishes. Now how about that for an easy button?

Yields 4
Ingredients
- 1 Tbs olive oil
- 16 oz diced mushrooms
- 1 small red onion, diced
- 2 cloves of garlic, minced
- 1 lb lean ground turkey
- 1 1/2 Tbsp Italian Seasoning
- 6 oz fresh baby spinach
- 1 (14.5 oz) can tomato sauce
- Salt and Pepper, to taste
- Garnish, Parsley, chopped
- To serve, Roasted acorn squash, spaghetti squash or whole wheat pasta
Instructions
- Heat large saute pan over medium heat. Add oil. Once heated, add onions, mushrooms and garlic. Saute for about 10 minutes, or until onions or translucent and mushrooms are soft.
- Add ground turkey and use spoon to break up. As it cooks, continue to break up meat and incorporate veggies.
- Once turkey is cooked, add Italian seasoning, salt and pepper. Add spinach and tomato sauce. Heat through.
- To serve, add saute over roasted acorn squash, spaghetti squash or whole wheat pasta. Garnish with parsley.
