Why, Hello!!
I am back! I am back! I am backkkkkkkkk! After a few, wonderful past few weeks filled with wedding bliss, Mexico sun, salty margaritas, and quality time with my new husband, all I can say is, it was a dream filled month!
I am more than grateful for all the family and friends that helped Dustin and I celebrate. All I can say is, they all know how to party! I am working on a fun post to share with you all. Bet you can hardly wait!

Despite how much I enjoyed lounging on the beach with an endless frozen margarita in my hand, my body might go in to sugar overload if that diet continued. Yes, even though the wedding diet is over, I love the way nutrient dense foods make me feel and a tad bit too much of sugar will make me go into sugar overdrive!
So how does a girl get back on track? With a healthy start to her morning! Oats have been on my breakfast rotation for what feels like eternity. No complaints there.
Oats are a bowl of pure comfort; warm, sweet and creamy. With summer’s abundance of strawberries, I had to throw them into my oats. The addition of the vanilla protein powder not only adds creaminess but also adds a hint of vanilla. I also decided to throw in chia seeds; if you have never had them. They are little beads of greatness. They plump up when put in liquid and sort of gel up to help build some volume. I love them for their endless health benefits.
Sweetness from the strawberries meets the warm vanilla, oats and instantly reminding me of strawberry shortcake. Now, who can say no to cake for breakfast?

Yields 1
Ingredients
- 1/2 cup old fashioned oatmeal
- 1 T chia seeds
- 1 1/2 cups almond milk (or milk of choice)
- 1 scoop vanilla protein powder
- 1 Tbsp vanilla extract
- 1/2 cup diced strawberries
Instructions
- In a medium saucepan, combine oats, chia seeds, almond milk and vanilla extract. Cook on medium low heat, stirring every minute or so, until oats are fully cooked. (They may be a bit of access liquid. That is okay! It will be absorbed once the protein powder is added.)
- Remove from heat and stir in protein powder until fully incorporated.
- Add strawberries on top, and enjoy!
