Welp, and just like that, we are facing another Monday.
I feel like Monday is the red headed step child. Poor thing.
But what if Monday’s held great potentional to be awesome? A bit of a far stretch, huh?
After coming off of a fun weekend celebrating our one year anniversary and eating some insanely delicious cake that had a hidden peanut butter cup in the middle, (OMG), I am a bit more chipper than most Monday mornings! I’ll take it.
Our cake lady made our cake topper specially for our anniversary because our wedding cake was actually fake and she made sheet cakes to serve. Genius. Our wedding cake was more on the glamour side with rhinestones, too many layers to count and a bit of sparkle. It was exactly what I had envisioned. And the best part was the cake stayed out the entire evening of our wedding rather than being taken down and cut into a million pieces!
So my peppiness on this Monday morning could be contributed to the copious amounts of sugar I consumed, but let’s say I am just welcoming this week with open arms. Each day and each week is a chance to start fresh. Think positively and really challenge yourself!
Despite having a positive outlook to start your week, I always think coffee is a necessity. Put a little pep in your step. Rev your engine a bit! We all know I love my cold brew and with a bit of chocolate in it never hurts either…but today’s is a copycat from a local coffeehouse that has stolen my tastebuds and wallet this summer. Almond Honey Toddy.
It’s stupid simple and highly addicting. We start with take on simple syrup…hot water mixed with a bit of honey. After a quick stir, top with cold brew, a bit of water and splash of almond milk (or milk of choice). The amount of milk really depends on how much milk/creamer/etc you like in your coffee! Some days I want a bit of coffee with my milk and others I would rather have a splash. Really depends on the day and is often unpredictable…
Also, if you prefer your coffee a bit sweeter than what the honey provides, (hello, me!), add a bit of sugar, more honey, Truvia, or stevia drops. Enough to get my tastebuds tingling!
This recipe is so simple, made with ingredients you usually will have on hand as well. While I highly suggest making this Honey Toddy with a cold brew, I understand it takes some thinking in advance, which I don’t always do. Cold brew is less bitter than regular coffee, smoother and a bit sweeter on its own. And not to mention it requires only a few steps: slightly grinding fresh coffee beans, adding cold filtered water and letting them soak overnight. Simply strain and chill until ready to use! Add a ratio of 1:1 of cold brew to liquid of choice, and you have a coffee house beverage right in your own kitchen.
Forget that $5 coffeehouse drink and sip on your own creation!

Ingredients
- Honey Sauce:
- 1/2 ounce honey
- 1/2 ounce hot water
- Coffee:
- 8 ounces cold brew , or chilled brewed coffee
- 4 ounces water
- 2 ounces unsweetened vanilla almond milk
- Few drops SweetLeaf Vanilla Stevia or sweetener of choice, if desired
Instructions
- In a small bow, combine the honey and hot water until smooth.
- Add to a glass with ice.
- Pour the coffee, water, almond milk and stevia (if using) into the glass and stir well.
- Serve immediately.
