H*ll must have frozen over as I just said those words. Let’s just say I am the ‘dreamy’ in our relationship and the hubs is the so-called ‘realist’ of the two. I have visions and all he sees is the dollar signs and work that goes behind those visions. Every relationship has a ying and yang, amiright?
So this past weekend, I checked out my second home and only to realize the bathroom vanity I have had my eye on for only 8 months was finally on sale. Cue angel’s singing! But not only did we pick up our bathroom vanities, but as well as new faucets for said vanities, a ceiling fan for our playroom and path lighting for our walkway. Let’s just say my visions are coming along quite well as well as my husband’s to-do list. But isn’t springtime meant for spring cleaning and house reno’s? Please agree with me…oya.
With our ever growing to-do list and a little man almost on the move, dinnertime around our place is all about ease and what we can shove in our mouths quickest before an episode of Mickey is over. And during the spring and summer, that means fresh vegetable meals. And a long-time favorite is bruschetta! Fresh cherry tomatoes mixed with garlic, olive oil, a touch of balsamic vinegar, salt, pepper and my favorite herb, basil. My summer consumption of basil is absurd. Which reminds me, that is another thing to add to the hubs to-do list: learn how to grow basil.
Rather than pairing bruschetta with the classic toasted baguette, I chose to top creamy and delicious Sabra Hummus! I could already eat Sabra hummus by the spoonful, but add garlic infused cherry tomatoes and it takes pre-dinner snacking to a whole new level. This Unofficial Meal is a staple in our house as we are ravenous by dinner time so easy snacks such as this Bruschetta Hummus keeps us tied over until the main event.
One of the best things about this bruschetta hummus, besides the robust flavor, is the ease of preparation. In case you didn’t notice, it takes merely 5 minutes to throw together, but if you are the meal prep type person, feel free to prepare the bruschetta mixture ahead of time and let the flavors marry in the fridge until its time to dig in! Not only do you save time at the unofficial meal time but the flavors deepen. Win win!
With summertime right around the corner, I can already predict my appetizer staple! Now, who wants to through a backyard bash? I’ve got the food covered…

Ingredients
- Bruschetta:
- 1 heaping cup diced cherry tomatoes (halved if small, quartered if large)
- 1 minced garlic clove
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon extra virgin olive oil
- 1 teaspoon balsamic vinegar
- For serving:
- 1 container Sabra Hummus (I love the Pine Nut and Basil for this!)
- Sliced and Toasted Baguette, Pita Bread and/or Crackers
- Sliced Cucumbers
- Baby Carrots
Instructions
- Bruschetta: In a small bowl, combine the tomatoes, garlic, salt, pepper,
oil and vinegar. Stir to combine. - For serving: Top hummus with bruschetta mixture and serve with choice of baguette, pita bread, crackers, cucumbers and/or carrots. Enjoy!
Notes
*The Bruschetta mixture can be made ahead of time and stored in a sealed container in the fridge until ready to serve! The flavors meld wonderfully as time goes on!
